KAIRI CHI KADHI | KAIRI AMTI - SAAR

Today we had the first drizzle in hyderabad ....thanks to the rain .......it was a great releif from the scorching heat in summer....Ya but summer reminds of kachi kairi ( raw mango) & kairi reminds me of panha ( a refreshing  mango drink) & kairichi amti

Personally I have a tooth for spicy & sour food rather a khatta meetha taste......this summer i tried this kairichi amti as per the recipe shown in a marathi tv show called as lajjatdar & it turned out yummy....

Presenting you the recipe tried by me ......This can be eaten as appetizer and also with chapati & rice


Ingredients

1 cup Mango
1/2 cup fresh coconut/desicated coconut ( i used desicated)
3 cups Water  ( depends on the consistency required)
2 chilies (green or red)
Cut Cilantro (for garnishing)
Jaggery/sugar - depends on the sourness of mango & your taste
pinch - red chilli powder/ lal tikhat (normal red masala used in vegetables)
Salt - per taste

Tempering -
 1 tbsp oil,
mustard seeds (rai)
cumin seeds (jeera)
 Asafoetida,
 Turmeric,
fenugreek seeds (1/2 tsp each),
 few curry leaves

Method:

  1. Wash & peeel the mango skin after removing the seed.  cut into small pieces & pressure cook upto two whistles in a cooker & allow to cool.
  2. Next grind the cooked mango ,coconut, 1 chilli,pinch of mirchi powder to form a fine paste.
  3. Take a pan & add required amt of water to the mango coconut paste ,salt,jaggery/sugar & bring it to a boil & switch off the gas.
  4. Next heat oil in a tadka pan & add rai, jeera,Asafoetida, fenugreek seeds slit chilli,kadi patta ,turmeric & prepare a fine taadka (seasoning).
  5. Finally  pour the seasoning on the kadhi preapred in step 3.cover with lead immediately after you pour the tadka.
  6. Garnish with fresh coriander leaves.
Tips:
1 U can add chopped garlic in tadka.
2 you can add a tspn of rasam masala /garam masala during the final boil of the kadhi.
3 U can prepare the tadka first & then pour the mago cocunut paste & & add required amt of water to the mango coconut paste ,salt,jaggery/sugar & bring it to a boil & switch off the gas.
