RISOTTO CROQUETS RECIPE|CRISPY RISOTTO CROQUETS USING LEFTOVER RICE

This is easy to make snack from leftover rice & mozarella cheese





Ingredients

1 cup - rice (can use leftover rice)
1/2 cup - breadcrumbs
1/4 cup - rice flour
1 tsp- ginger paste
2 -green chillies
1 cup -coriander leaves
1-2 smashed boiled potatoes
1tspn -lemon juice
salt as per taste
cheese - cut in rectangles

Method :
  1. Mix rice,green chillies,ginger paste ,pinch of salt & grind it coarsely in mixer.
  2. To this rice mixture add mashed potatotoes,breadcrumbs,rice flour,lemon juice,salt,coriander leaves & mix properly.
  3. Apply little water to palms take a small portion of mixture & flatten it on palms. place a cheese rectangle on this & slowly shape the mixture so that the cheese gets stuffed in mixture & a longitudinal croquet created.
  4. dip the croquet in bread crumb & deep fry in oil.
