Baked Papdi |Wheat flour papdi Microwave Recipe


Baked papdi is a virtually fat free recipe for all low calorie food lovers!I have used a microwave for making baked papdis.it is adapted from tarla dalals book :microwave cooking



If you want to enjoy your favourite snacks sans any guilt, you need to just use smart cooking methods.

 In this recipe, you will find out how to make delicious, crunchy Baked Papdi using the microwave. Once you have the dough, each batch of 20 takes just a few minutes to bake, so you can prepare large batches and store them in airtight containers, to make delicious sev puri, papdi chat or to use as a base for any of your favourite toppings.



 Crispy baked papdis are delicious at any time of the day. You can spice up the dough, if you prefer, adding a little chilli powder/crushed pepper and cumin seeds. I personally like them just plain. Again, I would suggest the you store large quantities in an air-tight container.

I have used whole wheat flour to make these papdi but you can make  them with only maida or can use maida & wheat flour in half quantities each. (Read tips )

You can use papdi to make bhelpuri,papdi chat or sev poori.






Makes 18-20 papdis

Ingredients

1/4 cup whole wheat flour or plain flour (maida)
1/8 tsp crushed cumin seeds (jeera)
1/8 tsp ajwain (owa/carom seeds)
half tbsp oil
salt to taste



Method
1.Combine all the ingredients in a deep bowl and knead into a semi-stiff dough using enough water.
2.You can make papdi in two ways.roll a big round chapati & then with help of a round cutter cut individual papdi & prick them with fork to avoid puffing.roll chapati as thin as possible


3.second method is  divide the dough into 15-20 equal portions.

4.Roll 20 portions each into a 2 inch diameter circle. Prick each papdi with a fork at regular intervals.Place the 20 rolled portions on a microwave turntable taking care that the puris do not touch each other.



5.Microwave the papdis on high for 50 seconds. Turn the papdis and again microwave on high for 40 seconds.if papdis are still not done Once again turn the papdis and again microwave on high for 10 more seconds.



6 Remove and allow it to cool slightly.Store in an air-tight container. Use as required

Tips :

1.I have used whole wheat flour to make these papdi but you can make  them with only maida or can use maida & wheat flour in half quantities each.

2.my microwave took 50 seconds for one side and then 50seconds for the other side to bake .keep an eye after one side of papdi is baked as papdis can burn even if you microwave it for more seconds .so make a batch and check the timing required based on your microwave power and then make rest of the papdis

How to roast sabudana chikodi in microwave


Nowadays many people are calorie & diet conscious so they prefer less oily foods .In india you will find papad as a common side dish in many states right from North to south
We have many varieties of papad made from urad dal ,moong dal,sabudana ,rice ,nachni ,jowar,potato etc. 



Chikodi is a type of papad made in maharshtra from sago or sabudana

It is eaten during fasting /vrat /upvas but it tastes yummy even on normal days & normally it is eaten as a side dish with main meal

Normally these chikodi are deep fried in oil .So many people will try to avoid eating fried chikodi due to deep frying
But today I am going to tell you a method which uses zero oil for roasting chikodi in microwave & they taste even better than the fried ones .

You can use this method for roasting any papads.


Ingredients

Method:

1.Place the
chikodi  on the base of turn table (plate) side by side.take care they do not overlap each other


2.Close the oven door.Now select microwave mode  & use the highest power.


3.Set the timing for seconds & press start button.After 30 seconds open door & get hot roasted
chikodi without using a single drop.

4.If chikodi is not done after 30 seconds than you can microwave it for another 10 seconds

Microwave Kothimbir wadi |how to make kothimbir wadi in microwave



Kothimbir Vadi, a savory cilantro cake which is first steamed and then fried until crisp.kothimbir leaves are known as cilantro or coriander leaves in english.This is a quintessential Marathi dish, Cilantro is my favourite herb and this dish really showcases cilantro instead of giving it the seemingly superfluous role of a garnish.










Kothimbir vadi can be served as a snack with any chutney but I really love eating it as a side dish with dal and rice. . The one special equipment you need to make this dish is a steamer. If you own a pressure cooker, it was be used without the "weight" to steam this vadi.

The steamed vadi is perfectly fine for eating on its own (a very tasty and healthy snack indeed). Of course it tastes even better when fried and crispy :)

 Alternatively, if you would like something in between, make a "tadka" of oil, mustard and cumin seeds and pour over slices of steamed vadi. Made during festivals like ganpati chaturthi in maharashtra.

I have two versions of kothimbir wadi ,first version in which batter is  steamed ,then cooled & cut in cubes like dhokla & then deep or shallow fried & second one where batter is shaped in the form of rolls which are steamed,sliced & then  fried somewhat similar to aluwadi

In todays method we are going to make kothimbir wadi in microwave instead of steamer or cooker which will reduce steam time from 20 minutes to  5-6 minutes




Ingredients  :
2 cups chopped  cilantro/coriander leaves (Kothimbir),
1 cup gram flour(besan)
1 tablespoon rice flour,
1/4 cup bhajani (mixed flours such as rice flour, wheat flour, millet flour, barley flour and udad flour etc. however this is optional),
10 green chilies,
1 small piece ginger,
4 garlic cloves,
1 teaspoon roasted sesame seeds,
1/4 cup coarsely roasted groundnut powder (shengdana koot bharad)
1 teaspoon lemon juice,
1 tbsp Cumin coriander powder
1 teaspoon turmeric powder,
1/4 teaspoon asafoetida,
1 tsp sugar /jaggery
1 teaspoon garam masala,
1/4 teaspoon Sodium Bicarbonate (Soda) (optional)
salt to taste,
Oil for frying,



Method:

1. Chop coriander leaves finely. Mix in gram flour, bhajani and rice flour.

2. Grind chilies, ginger and garlic into a fine paste. Add this paste, sesame seeds, poppy seeds, lemon juice,,peanut powder, garam masala, turmeric powder, asafoetida and salt to the above mixture.

3. Add some water to make a thick batter (dosa batter consistency) and mix well. Remove the lumps.

4. Grease a flat microwave safe bowl or cake tin ( 6 INCH PAN) with oil . Pour the batter into the vessel .Cover it with its lid or a microwave safe lid.
5. Microwave on high for 4-5 mins .After 4-5 minutes Insert a knife or toothpick and if it comes out clean, the vadi is cooked well.The mixture should be cooked and firm.



6.Even after 5 minutes the batter is not cooked, then microwave for a minute or two.Let it cool.Then remove the steamed wadi in a plate
Cut it into diamond shaped or square shaped slices.Shallow fry or deep fry in hot oil till crisp and browned.
Serve Kothimbir Vadi hot with green chutney or lahsun (garlic) chutney


Tips :

1.The steamed vadi is perfectly fine for eating on its own (a very tasty and healthy snack indeed). Of course it tastes even better when fried and crispy 


2. Alternatively, if you would like something in between, make a "tadka" of oil, mustard and cumin seeds and pour over slices of steamed vadi.

3. you can even use besan and kothimbir in 1:1 ratio

How to make jeera powder in microwave |Microwave cumin powder

Entry of microwave makes your life easy and actually saves a lof of time.It can be used to roast /toast many ingredients in your kitchen.

After " how to roast peanuts in microwave" todays post is about making roasted cumin powder using microwave to roast cumin seeds.





Cumin seeds are known as Jeers in marathi & hindi.

I have posted " Home made cumin powder " using stove top earlier.

Always use "MICROWAVE MODE " for roasting cumin.Make powder in small batches & always store in air tight container to retain freshness.

After 2 minutes of roasting be careful in setting time in intervals of 1 minute or less as there are chances of Cumin seeds getting burnt 



Ingredients:

Microwave

Jeera / Cumin seeds - 1 cup


Method:

1)Place  cumin seeds in a microwave safe bowl or flat baking tray or cookie sheet .take a dish which has a bigger circumference so that jeera seeds are spread wide across the dish and will get roasted evenly


2.Now select microwave at HIGH microwave power and place the bowl inside microwave.

3.Microwave on HIGH power for 2 minutes initially.after 2 minutes remove dish & stir cumin seeds upside down with spoon

4.Microwave again for another 1 minute or less & remove dish .Now check the jeera would have got roasted to a brown colour.If you want to roast them more than repeat process for another minute or half a minute .


5.Remove from the oven let it cool & grind coriander seeds in a mixer to a fine powder.

6.Store in airtight container in fridge to retain freshness .

Tips:

1.Time required for roasting will vary as per microwave model & company

Parle G biscuit cake in microwave | glucose biscuit cake

Parle G biscuits or glucose biscuits takes me down my memory lane. As a child I used to love these biscuits
even today I Love them .I used to mix them with tea and eat it as a kheer.even today I do it



Now todays recipe is an easy instant 5 minutes cake from parle g biscuits which is made in microwave.You can make it in pressure cooker or oven too
I have used double pack 10 rupees which has 34 biscuits in it .I made this cake in my 6 inch tin in microwave.

I have already shared this with my friends and relatives & they too have tried this easy cake.You can use eno sachet or baking powder in this recipe .Its a bachelors recipe being very easy

Instant way to make cakes with short notice.









Ingredients

150 gms Parle G Biscuit packet ( 10 Rs double packet)
3 tbsp Cocoa powder
1/2 cup Sugar (adjust as per your sweet taste)
1 1/2 cups Milk,approx
1 Eno fruit salt sachet, plain or 1 1/4 tsp baking powder
2 tbsp chopped Dry fruits(walnuts ,almonds,cashew nuts etc)
Butter/Oil , to grease the pan

Garnishing
Cocoa powder or Icing sugar, for dusting
chocolate syrup 




Method:


1.Take a  microwave safe tin or aluminium 6 inch mould  and grease it with butter or oil nicely  biscuits like powder and empty in a large bowl.

2.Break biscuits into fine pieces and add cocoa powder, sugar and grind it in the mixer to a fine powder.

3. Add milk to the mixture.The mixture should be smooth,neither very thin nor very thick.

4. Add sliced dryfruits and mix well.Add eno/baking powder to it and give a quick stir

5. throw sum dryfruits in greased mould .Pour this batter into the greased bowl and level it off evenly.Sprinkle few more sliced almonds on top.

6.Select Microwave mode and Microwave it on HIGH for 4-5 mins.Check it after 4 mins, as the power differs for each microwave it is always better to check it in between.

7.If inserted tooth pick  comes out clean it is ready if it is slightly battery then again microwave it for a minute or more.Repeat the tooth pick test if needed.

8.Leave it undisturbed for 5 mins to cool .Run a knife around the corner of the cake and unmould it on to a plate.Slice only when the cake cools off completely or it can crumble



9.For decorations you can use chocolate syrup on top or sprinkle icing sugar /cocoa powder

Tips

1.Reduce the sugar to 1/3 cup if you like it less sweet.
2.It is always better to check the cake in between as settings differ for different microwaves.Insert a tooth pick and see if it comes out clean it is ready, if it is slightly battery then again microwave it for a minute or more.
3.You can use combination of biscuits like Parle G and Hide and seek biscuits or use just plain Parle G biscuits.

Microwave pista chocolate brownie | Easy 5 minute chocolate brownie in microwave


The mere mention of brownies makes my mouth watering .Who doesnt like brownies ?? 




Todays recipe is microwave chocolate pistachio brownie which is an instant , easy and eggless brownie .

Conventionally pistachio are added in brownies.I gave it a twist by replacing  walnuts with pista 

A rich, dark chocolate brownie which is ideal for a tea party or even as a dessert if served with a dollop of vanilla ice-cream.

Microwave brownie cake in pressure cooker

I had won  MICROWAVE SNACKS & DESSERTS BOOK by Tarla Dalal as a prize when we had visited Rajasthan tour arranged by Kesari tours and travels .I barely had idea during that time that I would ever enter the cooking field & that too baking.Its rightly said God does everything with a purpose.










Ingredients
1 cup plain flour (maida)
8 tbsp cocoa powder(1/2 cup to 3/4 cup)
1/2 cup sour curds (khatta dahi)
1/2 tsp soda bi-carb
1/2 tsp baking powder
1/2 cup melted butter ( or saffola oil)
3/4 cup powdered sugar
1 tsp vanilla essence
1/2 cup roughly chopped Pistachio
2 tbsp butter for greasing

Other ingredients
1 teaspoon butter for greasing
grease proof paper for lining

Method:

1.Sift together the flour and cocoa powder using a sieve. Keep aside.
2.Combine the curds and soda-bi-carb in a bowl, mix well and keep aside.
3.Combine the melted butter, powdered sugar, vanilla essence and ½ cup of hot water in another bowl and whisk well.
Add the curds-soda mixture and mix well.
4 Add the flour mixture and pista and mix gently to make a smooth batter of dropping consistency.
5.Grease a 150 mm. (6”) diameter shallow microwave safe dish using butter. Line it with a piece of greaseproof paper at the bottom of the dish and again grease it using a little butter.
6.Pour the batter into the greased and lined microwave safe dish, spread it evenly using a spoon and microwave on high for 3 minutes.
7. Reduce temperature to 70 percent and microwave for another 2 minute .remove and keep aside .
8. Cool slightly and unmould by turning upside down on a plate. Remove and discard the grease proof paper and serve hot.




Tips


1.For low calorie version use any mild cooking oil which doesnt has a strong smell.

How to roast groundnut (peanuts) in microwave?

 Roasted peanuts have a more intense flavor than raw peanuts and make ideal snacks for parties, seasonal events, and even for adding to some recipes. Follow these simple steps to roast your own peanuts at home. Enjoy.




Ingredients:

Microwave

peanuts /groundnuts


Method:

1)Place  peanuts or groundnuts in a microwave safe bowl or flat baking tray or cookie sheet .take a dish which has a bigger circumference so that peanuts are spread wide across the dish and will get roasted evenly


2.Now select microwave at HIGH microwave power and place the bowl inside microwave.

3.Microwave on HIGH power for 3 minutes initially.after 3 minutes remove peanuts & stir upside down with spoon

4.Microwave again for another 2 minutes & remove dish .Now check the peanuts would have got roasted to a brown colour.If you want to roast them more than repeat process for another minute



5.Remove from the oven. If you haven't already remove the skin from the peanuts and you still wish to do so, use the following nifty trick. Place the roasted peanuts in a jar or container and shake them, or into a clean dish towel and rub them. Take the jar, container, or towel outside and open them up and blow away the loose skins.There may be some that still require you to remove the skins by hand but that's up to you.

2 minute chocolate microwave brownie in mug





This is just a simple 2 min. brownie in a mug recipe!its a quick recipe to satisfy your chocolate cravings

Ingredients:


2 tablespoons oil or 2 tablespoons butter
2 tablespoons water
2 tablespoons flour
1 pinch salt
1 tablespoon sugar, for cocoa powder
2 -3 tablespoons cocoa powder  or 2 -3 tablespoons instant chocolate drink mix
1 teaspoon vanilla extract (optional)

Method:

1 Add 2 tablespoons of butter or oil.Melt butter.Add 2 tablespoons of water.Add a pinch of salt.Add cocoa or chocolate powder 

2.Add 1 tablespoon of sugar for chocolate powder  OR 2 tablespoons of sugar for cocoa powder.Add 1 teaspoon of vanilla extract 






 











3.Mix all ingredients nicely.Now Microwave it for 1 minute 30seconds   .ENJOY!

Tutti fruity Cake Recipe|Microwave tutti fruity cake with eggs


Tutti fruity cake was made by me during my alibag visit for my cousins .This was baked in microwave & I have also used eggs in this cake .

I have followed the exact recipe only addition is tutti fruity in the original recipe.






Ingredients:

3 cups  sifted all purpose flour (maida)

1 tablespoon baking powder

1/2 teaspoon salt

1 cup  unsalted butter, room temperature / 1 cup oil

1 3/4 cups (350 grams) granulated white sugar

4 large eggs, at room temperature

2 teaspoons pure vanilla extract

1 cup (240 ml) room temperature milk

1.5 cups tutti fruity

Method :

1)Preheat oven to 180 degrees C with rack in center of oven. Butter or spray with a non-stick vegetable spray, two 9-inch x 2 inch  cake pans. Then line the bottoms of the pans with parchment or wax paper, then spray the paper.

2)In a bowl, sift or whisk together the flour, baking powder, and salt.

3) In the bowl of your electric mixer, with the paddle attachment, or with a hand mixer beat the butter until soft and creamy about 1-2 minutes. Gradually add the sugar and beat until light and fluffy about 3-5 minutes. 








4)Add eggs, one at a time, beating well after each addition. Scrape down the sides of the bowl as needed. Add the vanilla extract and beat until combined. With the mixer on low speed, alternately add the flour mixture (in three additions) and milk (in two additions), beginning and ending with the flour.  




5)Evenly divide the batter between the two prepared pans, smoothing the tops with the back of a spoon or an offset spatula. Bake 27 to 35 minutes in a microwave or until a toothpick inserted into the center of the cake comes out clean and the cake springs back when pressed lightly in center.





6)Place the cakes on a wire rack to cool, in their pans, for about 10 minutes. Then invert the cakes onto a greased rack. Remove the parchment or wax paper and re-invert cakes so that tops are right side up.

Microwave Dhokla recipe |How to make instant soft Nylon Khaman Dhokla in microwave

Todays recipe is khaman dhokla made in microwave.This is an instant ,easy dhokla recipe with no soaking & fermentation of batter.
Besan /gram flour /chickpea flour is used to make this dhokla


Gram flour dhokala prepared in less oil is very much liked by all. Traditionally, dhokala is made on gas or pressure cooker or in a plate placed above a stand. But gram flour dhokala made in microwave can also be prepared very easily and instantly. 

Below dhokla was made by me for my cousind during my recent Alibag trip






Ingredients

1 cup besan | chickpea flour
2 tablespoon sooji | rava | semolina
pinch turmeric powder
1/4 cup curd ( yoghurt)
3/4 cup water
2 teaspoons sugar
2 teaspoon lemon juice
2 green chillies + 1 inch ginger grind to a coarse paste
1 teaspoon enos fruit salt
1 cup water salt to taste
1 tsp oil for greasing

Seasoning

2 tablespoon oil
1/4 teaspoon mustard seeds
1/4 teaspoon sesame seeds
1/4 teaspoon asafoetida
10-15 curry leaves
4 green chillies , slit lengthwise & cut into halves
2 tablespoon grated fresh coconut
3 tablespoons water
a small bunch of chopped coriander leaves, for garnish
1 tsp lemon juice
1 tsp salt + 1 tsp sugar



Method:

1.Take all dry ingredients of dhokla except eno salt in a bowl and mix them well with a whisk.

2.Add water gradually to make smooth batter of pouring consistency taking care that there are no lumps present.



3 Grease a deep microwave proof dish or baking tin with 2-3 drops of oil. Add eno fruit salt to batter and whisk it for 2-3 mins to make the batter fluffy.


















4.Pour the batter into to the greased dish and cover tightly with  lid. Microwave it on high for 3-4 minutes and take it out removing lid.














5.Allow it to rest for 5 minutes and then cut the khaman dhokla into square pieces. 

6.Transfer all the pieces to serving plate/bowl. Heat oil in small pan; add mustard seeds. Once it splutters, add sesame seeds,curry leaves,slit chillies and asafoetida into it.Turn off the heat and add water.add sugar,salt lemon juice mix well till sugar dissolves




7.Pour this watery seasoning over all Nylon Khaman Dhokla evenly and garnish with chopped coriander& grated coconut and it's ready to serve!!!




Tips

 Citric Acid  or limbu ka phool  can be used to replace lemon juice.

 Dont keep batter out after adding eno ,microwave it immediately
