Amla Rice,Nellikai Sadam,Usirikaya pulihora,Gooseberry Rice Recipe



Amla / Awla / Gooseberry is a super fruit and it has numerous health benefits.


















Amla(known as 'usirikaya' in telugu and 'nellikai' in tamil and kannada) is rich in vitamin C and is very essential to include it in our diet frequently.




 One should eat amla daily as it is well known for its health benefits and is proved to be the best immune boosters. It is high in vitamin C and a great source of antioxidants.








It helps to control diabetes, heart diseases and protects us from cancer. Due to its high anti-oxidants, it slows down ageing.



This amla rice recipe is  called as usirikaya pulihora in telugu.....I made it simple just like lemon rice.



























Ingredients
Cooked Rice - 1 and 1/4 cups
Amla - 1/2 cup heaped grated

To temper
Urad Dal - 1/2 tsp
Curry leaves - a small sprig
Oil - 1 tbsp + 1 tsp
Mustard Seeds - 3/4 tsp
Chana Dal - 2 tsp
8-10 Cashew nuts,broken
Curry leaves - 1 sprig
Red Chillies - 2
green chillies - 1
Peanuts - 2 tbsp
Turmeric powder - 1/4 tsp
Hing - a small pinch






Method :
1.Wash and soak the rice for 10 to 15 minutes with 2 cups of water.Prepare the rice either in pressure cooker or rice cooker.spread it with a tsp of oil.Cool the rice completely.
2.Wash amla, grate it using a grater,Discard the seeds...Set aside.Heat oil in a pan - add the items under 'to temper' table, let mustard seeds splutter.
3.Fry till dals turn golden brown then add grated amla and saute for 2-3mins.
4.Add cooked rice to the amla seasoning and mix gently.
5.Serve hot with papad or any curry of your choice.

















Tips
Use amla as per sourness of amla. Some amla are very sour and may make the rice very sour.
You can use leftover rice too to make variety rice.If you are using hot rice,make it well in advance fluff and spread it with oil and keep aside.
If you wish you can even add onion for extra crunch.
Adjust the number of green chillies in the recipe accordingly.I prefer to make this rice spicy and tangy.

Health Benefits of Amla
1. Use 3 to 4 Indian gooseberries to make a glass of amla juice to induce more inclusion of Vitamin C.
2. Amla juice has cell rejuvenating properties and therefore is used in maintaining good health of skin and hair. Amla juice can be applied to the hair and then washed off to prevent dandruff and to keep the hair glossy and shining.

Ingredients

2  whole amla (awala or indian gooseberry) deseeded and chopped roughly
1 tsp amla squash  /lemon juice
1/4 tsp powdered star anise (chakri phool)
1/2 tbsp honey
2 -3 ice cubes



Method


1.Combine the indian gooseberry, indian gooseberry squash, star anise powder and 1cup of water in a mixer and blend till smooth. Strain the liquid and keep aside.

2.Combine the strained liquid and honey and mix well in a mixing glass.

3..Pour into individual glasses add ice cubes and serve.





Tips :
You can use make this drink with either amla squash or whole amlas .If  using only amla squash use 2-3 tbsp amla squash for 1 glass of drink. if using fresh whole amla add

AMLA SYRUP - AMLA (AVLA ) SQUASH -home made recipe

Amla syrup is a byproduct of amla petha / amla candy recipe .That is while making amla petha your amla syrup gets ready automatically .Its like make one recipe & get one recipe free.





Husband had got plenty of awla stock from big bazaar & so my focus was on trying various dishes made from amla . so after trying amla chutney & amla pickle ,next one was amla candy .This candy is not only good in taste but for health too.

Benefits of amla :
* A good source of vitamin C, potassium and bioflavonoids.
* Fair amounts of iron and vitamin A.
* High in fiber, low in calories.

Have u eaten this sweet & sour awla petha (amla candy) ? If  no  my suggestion is do try this tasty awala petha.This will be liked by your kids as well as elders.normally we get plenty of amla from october to january.


Ingredients:

10-15 Amla (awala -indian gooseberry) ( about 1 cup)
1 tsp grated ginger
1 tbsp lemon juice
1 1/2 cup sugar


Method:







1. Wash amla wipe with a cloth .place amla in cooker tin ,sprinkle very litte water on whole amla & pressure cook for 2-3 whistles.let them cool.



 2 .place boiled amla on a towel so that extra water is absorbed .Now cut them into long pieces as shown below.




3. Now boil sugar with equal water to make one string syrup (ek tari paak) .mix ginger & lemon juice .




 4. now add amla pieces in sugar syrup & mix well .




 5.Let the pieces remain in syrup for 3 days. On third day you will find the amla pieces at the bottom of syrup as they have absorbed sugar syrup

6.on fourth day remove pieces & place them on a paper  to dry in sun for 2 -3 days you will get amla petha or avla candy.

7. Now heat the balance sugar syrup remaining in a pan an a low flame stirring in between till the amla syrup becomes litte thick & golden in colour .Now cool syrup, strain it and store in
  into an air tight container of plastic or glass.




8. When you need Amla sharbat  mix 3 tbsp of squash/sharbat with enough water and ice cubs. Serve refreshing amla sarbat

   
 This sarbat is not only good in taste but for health too.

AWLA SARBAT -AMLA SHERBAT (SHARBAT)- INDIAN GOOSEBERRY JUICE

Husband had got plenty of awla stock from big bazaar & so my focus was on trying various dishes made from amla . so after trying amla chutney & amla pickle , amla candy ,  

amla supari next was avla sarbat .This awla sarbat is not only good in taste but for health too.

.Normally we get plenty of amla from october to january.

Benefits of amla :
* A good source of vitamin C, potassium and bioflavonoids.
* Fair amounts of iron and vitamin A.
* High in fiber, low in calories.
*Amla promotes healthier hair, and boosts the absorption of calcium, thus creating healthier bones, teeth, nails and hair. 
* Helps to maintain youthful hair color and retards premature graying.
*It is rich in Vitamin C , and known to prevent premature hair-fall. The rich source of Vitamin C from the fruit acts as a great detoxifying agent for a sluggish liver, and helps to make the skin clear and radiant.

Ingredients:

10-15 Amla (awala -indian gooseberry) ( about 1 cup)
1 tsp grated ginger
1 tbsp lemon juice
1 1/2 cup sugar








Method:

1. Pressure cook amlas for 2 - 3 whistles. Allow it to cool.



 






2. Deseed the boiled amlas,cut it into small pieces .Now grind amla pieces with sugar and salt. Grinded paste or Squash should taste sugary. 







3. Transfer this to a glass or plastic bottle and refrigerate.

4. To prepare Amla sherbat mix 3 tbsp of squash/syrup with enough water and ice cube. Serve refreshing ,tasty healthy amla sharbat


Tips :

1 Add black salt or pepper powder or mint  leaves while serving

Awla supari | Homemade amla (indian gooseberry) supari

Husband had got plenty of awla stock from big bazaar & so my focus was on trying various dishes made from amla .As you know read more health benefits of amla here.











I saw this recipe on marathi tv program sugran & then with few additions from my mom finally made this recipe & I confess that amla suparis turned out too good infact much better than store ones.

so here goes the recipe of home made AMLA - AWALA  supari.


Ingredients:

10-15 Amla (awala -indian gooseberry) ( about 1 cup)
1 tsp grated ginger
1 tbsp lemon juice

Masala to grind

 
1 tbsp badishep (fennel seeds)
2-3 green elaichi - cardamom
1 tbsp carom seeds (ajwain- owa)
1 tsp sugar
3-4 cloves (lavang)
1 tsp salt
1 tbsp rock salt / black salt (sendha namak)





 






Method:

1. Wash amla wipe with a cloth .place amla in cooker tin ,sprinkle very little water on whole amla & pressure cook for 2 whistles.let them cool.

2 .place amla on a towel so that extra water is absorbed .Now remove seed & smash amla pieces with a masher finely .You can even coarsely grind them in mixie but take care not to  grind finely or else it will become watery.

 


3. Dry roast   badishep ,carom seeds,cloves without burning .Cool & grind them into a powder along with sugar .












4. Now mix this powder with smashed amla & add salt & rock salt .mix grated ginger & lemon juice .mix everything finely.





5 Now make small sized amla suparis & place them in a plate.Next keep plate in sun & let it dry for 2 days .On second day you will find that supari has started to harden .Now turn it so that other side also gets dried in sun on next day.

6 Your awla supari is ready .Store in airtight container & enjoy after meal or any time of the day . this will last for 1 year but very frankly supari is so tasty that it will get over in week.
