Fruit custard with jelly |fruit salad with jelly and custard


I was planning to make this wonderful dessert during diwali but somehow i postponed it and tried it last week 

.Surely a  recipe during any  festive season like diwali,christmas,new year party or birthdays or for a sweet surprise to your near and dear one

 It is easy to make and is the perfect ending to a heavy meal." 
Best part is you can make this recipe as per your taste and like .You can make preparation in advance and refrigerate (dont freeze)jelly,custard and whipped cream but cut the fruits only when you plan to make the pudding












Ingredients: 


Mixed fruits of your choice - banana,apple,grapes,pomegranate,strawberry ,grapes,chickoo - 1.5 cup



Jelly - raspberry /strawberry flavour (use half packet)

Custard

Milk - 2  cups 
Custard powder - 2 tbsp 
Sugar - 4 


Transparent Small sized glass bowls 

GARNISHING

Whipped Cream – 1/2 cup (optional)


Method:

Custard

Boil milk, mix custard powder with 2-3 tbsp of warm milk and make a paste. 

Simmer and add the custard paste to the boiling milk slowly stirring continuously. After it becomes a little thick, remove from flame. 

Cool it and keep it in the refrigerator. 

 

Jelly

Make the jelly as per instructions on the pack. After it cools, set it in a tray and refrigerate it. 





Fruits

Cut mixed fruits into even sized pieces and ,add 1 tsp lemon juice to prevent  to prevent discoloration,mix with a spoonful of and keep it refrigerated 






Assembling 

1.In a mixing bowl add the chopped fruits .now pour custard on top of it mix well. the quantity of custard depends on your choice.



2.Next add some sliced jelly and mix well

3.Next pour it in a serving bowl and add sliced jelly on top of it 

4. you can even top fruit custard  with whipped cream and then throw some jelly on top of it.


5.Cover each bowl with a wrap and Keep it in the refrigerator for minimum 1 hour and enjoy delicious fruit salad with custard. 




Tips


use seasonal fruits avialable

always set pudding for few hours in fridge before serving

Can use strawberry or raspberry flavoured jelly 

can garnish fruit salad with even tutti fruity
On top of this custard you can add a scoop of vanilla or your choice of ice-cream and make a more grand dessert.

Carrot Beetroot Halwa|Gajar aur Beetroot Halwa



Todays recipe is beetroot carrot halwa.
 Traditionally carrot halwa or beetroot halwa are made separately but I combined the orange carrots with red beetroot and prepared this delicious Beets & Carrot Halwa.
believe me it was just ausume and had a lovely bright red colour




There are various varieties of halwas and the most popular among them are

  Gajar ka Halwa
  sooji halwa
  mango halwa 
  apple halwa
  doodhi halwa


Indulge in the healthy and delicious dessert.




Ingredients

1 cup grated Beetroot

1 cup grated carrot

2 cup whole Milk (full cream milk)

1/2 cup milkpowder or khoya/mawa

3/4 cup sugar ( add as per taste)

1 tablespoon cardamom powder

5-6 saffron threads

1 tablespoon blanched almonds+1 tbsp pista

1 tablespoon broken cashew nuts+1 tbsp raisins

2-3 tablespoon ghee or butter






METHOD :

1.Heat 2 tablespoon of ghee or butter in a heavy bottom pan, add dry fruits fry it to golden brown and keep aside.

2.In the same pan, add little ghee, grated carrot and beets. Fry for few minutes till raw smell goes for about 7 minutes.



3.Add milk and cook on medium heat till milk is absorbed fully it will take 15-20mins.

4.now add milk powder/khoya and sugar. Stir well and simmer until it thickens again about 5 minutes.



5.add the remaining ghee,saffron and cardamom powder. Cook till the ghee seperates and the halwa will slow turn nonsticky.
6.Garnish with fried cashew ,almonds and pistachios .

Serve hot or chilled. Eat the way you love it, Enjoy!


tips
1.you can make just beetroot or carrot halwa using the same recipe.
2.You can make this halwa Sugar free by adding 3/4 cup of chopped dates instead of sugar
3.Can use pressure cooker also to make this halwa

Pomegranate Shrikhand |dalimbacha shrikhand |fruit shrikhand|Anar ka shrikhand





Shrikhand is mildly flavoured indian dessert which is traditionally prepared by hung curd , sugar and spices like cardamons, saffron and dry fruits.

It is one of the main desserts in Gujarati cuisine and Maharastrian cuisine.

Addition of pomegranate gives a new twist to this yummy shrikhand transforming it to new fruit shrikhand.

pomegranate juice imparts a nice pink colour to it

your kids will love this healthy fruity shrikhand.

 



Pomegranate is known as dalimba in marathi and anar in hindi

Saffron shrikhand

Ingredients
1/2 kg thick curds (dahi)
1/3 cup powdered sugar(adjust as per taste)
1-2 tbsp dryfruits (badam,pista,kaju)
a few saffron (kesar) strands
1/2 tbsp warm milk
1 tsp cardamom (elaichi) powder
1 medium pomegrante kernels /anar ke dane /dalimba che dane


Method
   1. Hang the curds in a muslin cloth in a cool place for approximately 3-4  hours until all the liquid (whey) has drained off.

   2. Rub the saffron into the warm milk until it dissolves.

  3.  grind half pomegrante kernels in mixer ,strain juice to separate seeds & remove juice in bowl

4.Mix together the hung curds,pomegranate juice, sugar, saffron mixture,dryfruits and cardamom in a bowl and churn using a hand blender.



5. gently fold few  pomegrante kernels  and chill in refrigerator.

6. Serve garnished with  pomegrante kernels




Tips
1.do not forget to strain pomegranate juice if making at home
