 Come summers and it is time to savour mangoes. In the Hindu mythology mango is known as "food of the Gods". Mango is popular throughout the world.

This King of Fruits, as the mango is known, has long been the object of much love, envy, and status, and the allure is due both to taste and uncertainty: when the season hits, things go crazy.

There are lot of dishes that can be made from mangoes like milk shakes, juices, jam, jellies, pickles and mango papad. Even raw mangoes can be used in chutneys and curries.

The mango is a fleshy stone fruit belonging to the genus Mangifera, consisting of numerous tropical fruiting trees in the flowering plant family Anacardiaceae. The mango is native to South Asia, from where it has been distributed worldwide to become one of the most cultivated fruits in the tropics. While other Mangifera species (e.g. horse mango, M. foetida) are also grown on a more localized basis, Mangifera indica – the 'common mango' or 'Indian mango' – is the only mango tree commonly cultivated in many tropical and subtropical regions.

 
It is the national fruit of India,Philippines and Pakistan.
In several cultures, its fruit and leaves are ritually used as floral decorations at weddings, public celebrations and religious ceremonies.

The English word "mango" (plural "mangoes" or "mangos") originated from the Tamil word māṅgai or mankay or Malayalam māṅṅa from the Dravidian root word for the same via Portuguese (also manga).

Alphonso is a seasonal mango cultivation that is considered as one of the best in terms of sweetness, richness and flavor It has considerable shelf life of a week after it is ripe making it exportable. It is also one of the most expensive kinds of mango and is grown mainly in largest region of western India. It is a seasonal fruit with each mango weighing between 150g and 300g each. This variety of mango has a very short season of about two months from the end of March till end May when the rain sets in the Konkan Region


MANGO VARIETIES IN INDIA

Alphonso, Benishaan or Benisha (Banginapalli in Telugu and other south Indian languages) and Kesar mango varieties are the most popular varieties in India's southern states, while Chausa, Dasheri, Rataul and Langra also known as dudhia malda varieties are most popular in the northern states. Names of other varieties of mango available in India are malgova, peethar, rumani, bangalura, rasalu, thothapari, neelam, sindhoora,Totapuri,payri and salem.
Generally, ripe mangoes have an orange-yellow or reddish peel and are juicy for eating, while exported fruit are often picked while underripe with green peels

The energy value per 100 g (3.5 oz) is 250 kJ (60 kcal), and that of the apple mango is slightly higher (79 kcal per 100g). Mango contains a variety of phytochemicals[21] and nutrients. The fruit pulp is high in prebiotic dietary fiber, vitamin C, diverse polyphenols and provitamin A carotenoids.

In mango fruit pulp, the antioxidant vitamins A and C, vitamin B6 (pyridoxine), folate, other B vitamins and essential nutrients, such as potassium, copper and amino acids, are present. Mango peel and pulp contain other compounds, such as pigment carotenoids and polyphenols, and omega-3 and -6 polyunsaturated fatty acids.

Consume the filtered decoction in the morning for diabetic home remedy. The glycemic index of mango is low, ranging between 41-60. So, mango does not have any significant effect in increasing blood sugar levels.
  11. Mangoes can be beneficial for people wanting to gain weight. A 100 gram of mango contains about 75 calories
  12. Mangoes are useful to children who lack concentration in studies as it contains Glutamine acid which is good to boost memory and keep cells active.

Health benefits of Yellow capsicum

Val papdi chi bhaji gujarati style|Lilva Batata nu Shaak |Surati Papdi (valor) sabji


Todays recipe is val papdi chi bhaji gujarati style.

This can also be called as mini undhiyo /oondhiya recipe .

If you want to have flavour of undhiyo but are bored to follow the elaborate process than try this sabji.

I have added potato & brinjal in addition to val papdi . val papdi is also known as ghevda in marathi.the variety which you get in month of shravan is known as shravan ghevda



Surati papdi is also known as Valor(Walor) in Gujarati. other names being sem ki phali in hindi, Chikkudu kaya in Telugu,hyacinth beans or Indian Beans in english & val papdi  or ghevada in marathi  



 
These beans have hard fibrous strings which are preferably removed always while preparing them to be cooked. Some choose not to remove these strings as it provides fibre to the diet. The method to remove these strings is to simply tear the tip of the bean with hand and pull away the string from each side in one motion.


Oondhiya is the most famous Gujarati delicacy in which surti papadi seeds are used.
A delicious plate of surati papadi seeds spiced up with masala also tastes best with puffed Pooris, served with onions and a slice of lemon and also varities like oondhiya and rice delicacies can be prepared using these beans. These can also be sprouted and used in variety of dishes



Health Benefits" Green beans are a very good source of vitamin C, vitamin K, manganese, dietary fiber, folate and thiamin (vitamin B1).
" They are also a good source of vitamin A, phosphorous, vitamin B6, protein, niacin, magnesium, riboflavin (vitamin B2), copper, iron, zinc and potassium



Ingredients

1 cup Surti lilva/surti papdi
1/2 cup val papdi / flat beans/
12-15 baby potatoes/2 medium potato cubes
1/2 tsp ajwain / carom seeds
a pinch of asafoetida
1/4 tsp turmeric powder
1 tsp chilli powder
1 tsp dhania/ coriander seed powder
1 tsp jeera / cumin powder
1/2 - 1 tsp grated jaggery / sugar
salt to taste
2 tsp oil


To grind -
1/2 cup grated coconut
1/2 cup coriander leaves
3-4 garlic pods
3 green chillies
half inch ginger



Method: -
1.Grind all the ingredients listed under 'To grind' to a smooth paste
2.Peel the potatoes and cook along with papdi beans and lilva, with a little salt added in a pressure cooker for 1 whistle
3.Heat oil in a pan and add the carom seeds and asafoetida
4.Add turmeric powder and the ground paste
5.Saute the masala till it changes colour
6.Add the dhania powder, jeera powder, chilli powder and then add the cooked vegetables,brinjals
7 Mix well so that the vegetables are coated with the masala
8.Add the jaggery and salt and 1/2 cup of water and bring to a slow boil
9.Serve with chapati





How to Select
When purchasing look for ones whose pods are firm, velvety and smooth. Their color should be a lively medium green. Those whose green color is especially light or dark, or those that are yellow, whitish or are speckled with gray, should be avoided. Additionally, do not choose pods that are puffy, water soaked or have mildew residue. The pods should contain beans of sufficient number and size that there is not much empty room in the pod. You can tell this by gently shaking the pod and noticing whether there is a slight rattling sound. Choose smaller ones as they tend to be sweeter.

To test the quality of beans, snap one open and see whether it is crisp. They should be bright green in color, firm and plump.

How to grow Methi at home | growing fenugreek leaves in balcony


I love gardening .Thats the reason you will find different plants in my balcony .recently I  started out experimenting with growing vegetables.











First one was growing pudina (mint ) at home ,
next  was growing kothmir (coriander) at home
& third was growing methi aka fenugreek leaves at home.








I was delighted to taste tender fresh methi from my own garden very first time which i used to make andhra style methi dal
Growing methi is easy and fun and it hardly takes 2 weeks to grow leaves and ready to use.I used the  plastic containers which we get when we order a home delivery for dal makhani .
You can use a regular kundi or pot/aluminium tray,plastic dabba /plastic container


Information about methi
Fenugreek (/ˈfɛnjʉɡriːk/; Trigonella foenum-graecum) is an annual plant in the family Fabaceae. The plant has small round leaves, is cultivated worldwide as a semi-arid crop, and is a common ingredient in dishes from the Indian Subcontinent. It is known as methi in Marathi (मेथी), Punjabi, Hindi (मेथी), Urdu, Bengali (মেথি) and Nepali (मेथी), as menthiyam, and venthayam (வெந்தயம்) in Tamil, "uluhaal" (උළුහාල්) in Sinhala, Helba حلبة) in Arabic, menthya ಮೆಂಥ್ಯ ) in Kannada, uluwa (ഉലുവ) in Malayalam, and menthulu (మెంతులు) in Telugu.



Fenugreek has three culinary uses: as a herb (dried or fresh leaves), as a spice (seeds), and as a vegetable (fresh leaves, sprouts, and microgreens). Sotolon is the chemical responsible for fenugreek's distinctive sweet smell.

The distinctive cuboid-shaped, yellow-to-amber colored fenugreek seeds are frequently encountered in the cuisines of the Indian subcontinent. The seeds are used in the preparation of pickles, vegetable dishes, daals, and spice mixes, such as panch phoron and sambar powder. Fenugreek seeds are used both whole and in powdered form and are often roasted to reduce their bitterness and enhance their flavor.

Fenugreek is also used as a vegetable. Fresh fenugreek leaves are an ingredient in some Indian curries. The sprouted seeds and microgreens are used in salads. When harvested as microgreens, fenugreek is known as Samudra Methi in Maharashtra, especially in and around Mumbai, where it is often grown near the sea in the sandy tracts, hence the name (Samudra, which means "ocean" in Sanskrit).Samudra Methi is also grown in dry river beds in the Gangetic plains. When sold as a vegetable in India, the young plants are harvested with their roots still attached. Any remaining soil is washed off to extend their shelf life. They are then sold in small bundles in the markets and bazaars.


Method:

1. Soak  methi seeds in  water for 12  hours or overnight.  .next day drain water & cover the conatiner so that methi will sprout .




2. take the kundi or pot/aluminium tray,plastic dabba /plastic container. Make holes with a hot knife  to all corners of  kundi or pot/aluminium tray,plastic dabba /plastic container .this is done to ensure that you drain excess water.very important step.

3.Fill 3/4th of the pot/aluminium tray,plastic dabba /plastic container with soil.

4 Methi seeds are seeded densely (not in rows). Scatter methi seeds dense in  soil. now cover this with a layer of soil and sprinkle water.


5.within 2 days seeds will start to germinate. moisten soil daily.(sprinkle water on pot do not pour water)


6.In a week your methi will look like this. You can harvest it at this stage





7 If you want big leaves than wait for a month.

Methi chicken |Methi Murgh | Punjabi Chicken curry with Fenugreek leaves


Sundays being non veg days mostly i end up in making chicken .

last sunday I made methi chicken  ie chicken with fresh methi (fenugreek leaves) & the taste was just ausome.Simple, yet delicious, Methi Murg is also easy to put together.





Its definitely a rich creamy & delicious dish which you can make  during special occasions.The fresh Methi (fenugreek) leaves add a lovely, earthy flavor to this dish. You can also use dried fenugreek if you don't have fresh leaves .

Methi Murg is served with plain rice, chapati ,roti and a salad.i adapted this recipe from sailus food.

 
 
before we proceed to recipe let me tell you about methi chicken .




 A legendary recipe from Punjab.This recipe is easy to cook and great in taste, as well as looks and texture.Chicken cooked with methi or fenugreek leaves, a signature North Indian dish that goes well with any Indian bread.

 

 



Ingredients:
 

 
 Chicken marination
250gm boneless chicken, washed and cut into medium sized pieces
Red chilly powder 2tsp
Coriander powder1tsp
 Garam masala powder 1/2tsp
 Turmeric powder 1/8tsp
 Ginger&garlic paste 11/2tsp
 Yogurt/dahi 2tsp
  Salt 1tsp

 Other ingredients
1 cup packed fresh methi leaves, add little salt+water, keep aside for 15 mts and squeeze out water
2 medium onions, sliced,

1 tsp green chilli paste (2-3 green chillis)


 
3/4 tbsp ginger garlic paste
  
2 tomato, pureed
  
1/4 cup yogurt/curd
  
large pinch turmeric pwd
  
1 tsp red chilli pwd
  
1 tsp coriander pwd
  
1/2 tsp cumin pwd

7-8 cashewnuts, soak in warm water
  
2 tbsps oil
 

 
  



Method:

 
1.Clean and cut the chicken to bite size pieces and marinate with the ingredients given for marination.Mix it well and refrigerate for an hour or more.
 
2. Heat oil in kadhai add the onions. Sauté till the onions begin to turn a pale golden brown in color. Now remove from the oil with a slotted spoon and drain on paper towels. Turn off heat.



 Grind the onions into a smooth paste  along with soaked cashew &  curd (yogurt) in a food processor. Once done, remove into a separate container.
 

 
3.Heat 2 tbsp oil in a kadhai,add ginger garlic paste and green chilli paste and saute for 3-4 mts. Add turmeric pwd, red chilli pwd, cumin pwd and coriander pwd and combine.





4 Add the tomato puree and cook for 2 minutes. Add the onion-curd cashew paste and cook for another 3 mts. add the methi leaves and saute for 7-8 mts



 5 Add the chicken pieces and combine well. Cook on medium high flame for 3-4 mts. Reduce flame, place lid and let the chicken cook till three fourth done.




 





 6 lastly add garam masala  and  combine well. Add few tbsps of water to adjust the consitency of curry. Cook covered till the chicken turns soft and you get the gravy consistency of your choice. It should be a thick creamy gravy.
 
 
 7 Turn off heat and serve hot with white rice, biryani, flavored rice or rotis.
