Poha idli recipe ,Soft fluffy Aval Idli


being an idli dosa fan ,I keep on searching for variation in Idli recipes or dosa recipes
todays recipe is poha idli which i referred from Tarla Dalal website .






Flattened rice (also called beaten rice) is a dehusked rice which is flattened into flat light dry flakes.poha  is known by various names





 It is known by a variety of names: Pauaa/Paunva (પૌંઆ) in Gujarati, "Poya" in Rajasthani, Chuda in Oriya, Atukulu in Telugu (Atukulu), Aval in Tamil(அவல்) and Malayalam(അവൽ), Chiura in parts of Bihar and Jharkhand, Chira in Bengali (চিঁড়া) and Assamese, Chiura (चिउरा) in Maithili, Nepali, Bhojpuri and Chhattisgarhi, Poha[1] or Pauwa in Hindi, Baji in Newari, Pohe in Marathi, Phovu in Konkani, Avalakki (ಅವಲಕ್ಕಿ) in Kannada

Super soft idlis made with a combination of broken and beaten rice, the Poha Idli is also relatively convenient to make compared to the traditional idli because idli rawa is used instead of whole idli rice. This helps you make the batter quicker and also ensures a perfect consistency, without having to worry about how coarse the rice has to be ground. Remember to grind the poha-rice mix and the soaked urad separately, to get perfect idlis. Enjoy hot and fresh with your favourite chutney and sambhar.





Ingredients
1 cup rice semolina (idli rawa)
1/4 cup beaten rice (poha)
1/4 cup urad dal (split black lentils)
 salt to taste
 oil for greasing
 


Method
 1.Clean, wash and soak the idli rava and beaten rice in water for at least 2 hours.
2.Clean, wash the urad dal thoroughly and soak it in water for at least 2 hours.
3.Drain the idli rava and rice, combine together and blend in a mixer to a smooth batter.
4.Darin and blend the urad dal separately to a smooth paste using a little water.
5.Combine the two batters, add salt and mix well. Cover and keep aside to ferment for 6 to 8 hours.
6.Put spoonfuls of the batter into greased idli moulds and steam for 10 to 12 minutes.
7.Repeat with the remaining batter to make more idlis.
8.Serve hot WITH SAMBHAR OR CHUTNEY

Idli Upma Recipe,Easy South Idli upma with Leftover idlis




DONT KNOW WHAT TO TO WITH LEFTOVER IDLIS ?

Answer is : "IDLI UPMA"




Idli upma is a very simple and delicious dish made with leftover idlis.This is a very common breakfast dish in South India, which can be prepared in no time.
It is really interesting to see how a simple boring idli turns into this colorful upma...

You can prepare this upma even if your idlis are hard.This upma is so delicious that you will find yourself making extra idlis just to prepare this upma.









Ingredients 

Crumbled idli - 2 cups
Onion -1 cup finely chopped
Tomato chopped- 1 small
Finely chopped carrot -2 tblsp
Green chilli -3 finely chopped
Ginger - 1 inch piece finely chopped
Turmeric powder - a pinch
Idli Podi - 1 1/2 tsp (optional but highly recommended)
Salt as required

Seasoning /Tadka

Oil - 1 1/2 tbsp
Mustard -1 tsp
Bengal gram (Chana dal) - 3/4 tsp
Urad dal(urad dal) - 3/4 tsp
Red chillies -2
Hing - generous pinch
Curry leaves - few




Method:

1.Crumble the idlis  coarsely with your fingers or you can use the mixie for better results.Cut the idlis into 2-3 pieces and put it in the mixie and pulse it for a few seconds.

2.Heat oil in a pan, add mustard seeds, when it splutters, add bengal gram, urad dal, red chillies, hing and curry leaves.

3.When dal turns golden brown, add finely chopped onions, green chillies,Carrots,tomatoes, ginger, turmeric powder, salt needed and saute till onions turns transparent.Then add the crumbled idli, idli podi and mix well.Check for salt.

4.Garnish with coriander leaves .It tastes good by itself but if you prefer you can have it with coconut chutney

Tips

Refrigerating the idlis gives beautiful crumble of the idlies. More you refrigerate, easy to crumble. 
 Do not prepare this upma with hot idlis.The idlis have to be cold, so that it will get crumbled nicely.
You can add a tsp of coconut with onions which gives a nice flavour.

Idli Milagai Podi MTR Style |Spicy chutney powder for Idli Dosa







I am absolutely in love with southindian food since childhood.This love for south indian food has grown multifold after having stayed in BANGALORE and hyderabad which introduced me to many more south indian biryanis , chutneys , dosas ,thokkus and many more recipes ...

One such dish was idli milagai podi .about which I have already blogged ....Now todays recipe is of Mtr style Idli podi which is available in market .Recipe source is sharmis passion.I have followed her exact recipe without making any changes

Ingredients

Dry Red Chilli - 12
Urad Dhal - 1/2 cup(Splitted or whole) 
Hing(asafoetida) - 3/4 tsp
Curry leaves - 10
Mustard seeds - 1/2 tsp
Oil - 1.5 tsp
Salt - 1/2 tsp

Method:


  1. Heat 1/2 tsp oil in a pan add mustard seeds and allow it to splutter, Set aside. In the same pan add red chillies, curry leaves and roast till it turns crispy, keep it aside. Then add remaining 1 tsp oil and roast urad dhal till golden brown.Allow it to cool.
  2. Then in a mixer - add roasted urad dhal, curry leaves , red chillies, required salt, hing and grind it to a semi coarse powder. Then add mustard seeds and pulse it once just to bring it together.

  3. Spread the powder in a plate , once cooled down store it in an airtight container.Add ghee or sesame oil and serve with hot idlis.

Kushboo Idli | Malligai Poo idli|Soft spongy idli recipe

Idli is one of the most popular and healthy South Indian Breakfast recipe. Is one of my personal favourite too.  so i do keep on searching various idli recipes .


Todays recipe is named as KUSHBOO IDLI. It is super soft idli .







Many of you will be wondering by looking at the name “Kushboo Idly”  . Kushboo Idly is named after the chubby and bubbly south Indian actress Kushboo. This Kushboo Idly’s will be soft, fluffy and pure white. It goes well with sambar and chutney.






Not sure from where this idly is originated,must be either madurai or chettinad..it is more popular in Tamilnadu, specially in weddings.


Kushboo idli is different than the regular idli it will be big and fluffy.

Ingredients 

Raw Rice-4 cups
Urad Dal-1 cup
sabudana /Javvarisi-1/2 cup
Salt-1 tbsp
Cooking  Soda-1/2 tsp

Method

1.First wash the rice and urad dal with water and soak both of them together for 3 to 4 hours.

2.Wash the javvarisi or Sago and soak with 3-4 cups of water for 3 hours.

3.Grind everything together in a grinder to a smooth batter.

4.Allow this to ferment for 6 to 8 hours.

5. Now add little baking soda with water and mix well in the fermented batter.

6.Next grease the idli maker, pour a ladle full of batter and steam it for 8-10 minutes

7.Now the hot malligai poo idli is ready.

Tiffin sambar recipe, how to make hotel style tiffin sambar recipe

I love idli sambhar combination .hence i search for a variation in the idli as well as sambhar .
recipes. 

sambhar is an integral part of South Indian cuisine and there are innumberable variations with  freshly ground sambhar powder or with stored sambhar powders.
Todays recipe is hotel style tiffin sambhar which we get in the hotels.




Points to note about tiffin sambhar
1.This sambar is always made with potato ,tomato and shallots. It gives the maximum flavour, every ingredient complimenting each other. But to increase nutrition you can add Other vegetables like carrot,beans, yellow pumpkin (parangikkai), drumstick and brinjal as per avialability.
2. In many homes, tiffin sambar is made with only moong dal while few others use a combination of two to three types of dals.
3.another point to note in this sambar – one is the freshly ground sambar powder, secondly a tsp of ghee and lastly a tsp of jaggery.
4.Vegetables are not essential for tiffin sambar except for shallots,potato and tomatoes.
5.This sambar should be with less tamarind, unlike our regular sambar. The tomato will give mild tanginess that is  just perfect
 It tastes awesome with mini idlis when drizzled with hot ghee.  Your kids will relish it and so will you










Ingredients
Toor dal - 1/4 cup (heaped)
Potato pieces - 1
Shallots(small onion) - 12
veggies chopped- 1 brinjal,carrot,2-3 beans,small piece of pumpkin
Green chilli - 2
Tomato – 2
Tamarind - small marble size
Turmeric - 1/4 tsp
Jaggery powdered - 1 tsp
Asafoetida - 1/8 tsp
Curry leaves - Few
Coriander leaves - 1 & 1/2 tblsp
Ghee - 1 tsp
Salt - 2 tsp (approx)
To roast
Channa dal - 3/4 tbslp heaped
Coriander seeds - 1 tbslp
Red chillies - 5
Fenugreek seeds - 1/2 tsp
raw rice - 1.5 tsp
curry leaves -5-6
Cumin seeds - 1/2 tsp
hing - half tsp

To Temper
Mustard - 3/4 tsp
Jeera - 1 tsp
Curry leaves - 1 sprig
Oil - 2 tsp
red chilli broken into pieces -2
Method
1.Pressure cook toor dal for 3-4 whistles, with 1 cup water, 2 pinches of turmeric, 2 pinches of asafoetida and few drops of oil. Mash the dal smoothly. Set aside

2.Mean while, roast the ingredients under ‘To roast’ table. You can roast everything together. But except jeera/ cumin seeds, which has to be added towards the end when the other ingredients gets the golden colour. Take care not to burn anything. Cool down and powder into a coarse powder. 

3.In a kadai, heat 1 tsp oil Add half of the asafoetida and give a quick stir. Add onions and fry till transparent.Add tomatoes, green chillies,veggies,potato pieces and fry for 1 or 2 minutes.. Now add few torn curry leaves,  salt, turmeric, ,1 cup water and bring to boil for 2 minutes

4.Add the sambar powder. Add it in a sprinkled way little by little with constant stirring to avoid any lump formation.  Then add the mashed dal. If the dal is too tight, add more water to loosen it before adding it to sambar.Now after adding the ground sambar powder and dal, the sambar tends to thicken. So you might be needed to add some 3/4 cup to 1 cup water to bring it to the right consistency.  once it starts boiling, as a final touch add the powdered jaggery and mix well.simmer for 2-3 minutes.
5.For tempering, heat ghee or oil in a small pan, add mustard seeds and allow to splutter. Add red chilis, curry leaves and asafoetida and saute for a few secs. Turn off flame and add the tempering to the simmering sambar and mix well.
6.Turn off flame, add coriander leaves or curry leaves and place lid. Do not open lid for at least 15-30 mts. serve with tiffins like idli, dosa, vada 




Tips :
  • This sambar should be with less tamarind, unlike our regular sambar. The tomato will give mild tanginess that is not sharp
  • You can use either tur dal or yellow moong dal or a combination of both the dals. 
  • Vegetables are optional. The sambar is excellent with just shallots and tomatoes 
  • Asafoetida is essential. It gives a unique flavor to the sambar.If pumpkin is not available, add more jaggery.Pumpkin adds sweetness to the sambar.
  • Smells great even the next day
  • Dont skip  the freshly ground sambar powder, secondly a tsp of ghee and lastly a tsp of jaggery.

Oats Idli Recipe | Rice Urad dal Oats healthy Idli

If you are fussy about eating oats then make idlis, dosas or chivda from them. Nobody can even guess whether oats is added in the idli.


Make YOUR Family eat this oats idli without uttering a word to anyone what are the ingredients and all idlis will be vanished in no time.Simple oats idli recipe for a healthy breakfast or snack option for people from all age groups.



I have posted instant oats idli earlier where you dont need any fermentation.
But todays idli is made with rice urad dal oats using fermentation method

The recipe have used is recipe for normal idli recipe but made with slight modifications. You have to ferment the batter that’ s the only preparation. So start making 15-16 hrs in advance before the day you want to actually make them.





Ingredients
Parboiled (idli) Rice/sona masuri rice – 2 cups
Urad dal – ½ cup
Fenugreek seeds – 1 teaspoon
Oats – ½ cup
Aval (Poha) – ½ cup
salt – as per taste
Method :
  1. Soak rice and urad dhal separately for 5 to 6 hours. Fenugreek seeds can be added along with urad dhal.
  2. Soak oats and aval together half-an-hour to one hour before grinding.

  3. Grind urad dhal and fenugreek to a soft paste. Then grind rice, oats and aval together to a coarse paste.
  4. Mix all the paste together with salt and keep it overnight or atleast 8 hours for fermentation.
  5. Grease the idli stand with oil .pour 1 laddle of batter to individual moulds .Steam them for around 10-12 mins (if using cooker, do not use the whistle add 2 glass of water to cooker). 
  6. Leave it for around 5 mins before opening the steamer/cooker (or else, the steam falls on idlis and make them mushy).
  7. With a wet spoon cleanly remove the idlis.

Tips :

1)The urad dal should be ground till it super smooth and it should be thick. Even though it is ground for a long time, rice will have some grits in it and it is perfectly ok.

2)The batter should be thick, not thin or runny.

3)Use a large container when you are fermenting, because my batter rised too much and a little over flowed.


 4).Proper fermentation of minimum 8-10 hours is very important to get soft idlis but in winter it may need much more time .If living in cold places you can even place the batter in a preheated oven and turn the oven light ON.

Ragi Idli Recipe |Soft finger millet ,nachni idli| How to make Ragi Idli

Ragi Idli Recipe - The plain idli turned into a nutritious one with ragi flour.Its a healthy breakfast/Dinner recipe for diabetic & people who look for weight loss.






Ragi idli,dosa recipe using fermentation method was in my try list for long time.But this recipe is surely a welcome change as one can make soft idlis & crispy dosas as well..Do try this soft idli recipe.you will love it for sure.
These idlies came out so soft. Even made dosa by adding some more water to the batter, the dosa came out so crispy and delicious. I hope you will try this out and let me know how it turned out..

Ingredients:
Rice - 1 1/2 cup ( I used idli rice)
Urad dal / Whole Ulundu Paruppu - 3/4  cup
Ragi Flour - 1.5 cup
Salt to taste
Water as needed
Baking Soda / Cooking Soda - 1/2 tsp
Oil for Greasing Idli Moulds

Method:

  1. Wash and soak urad dal + fenugreek seeds for 4 hours. Wash and soak rice separately for 4-5 hours.
  2. Grind urad dal adding water little at a time until smooth and fluffy. Remove and keep it in a vessel.
  3. Grind rice adding water from time to time to a sightly coarse batter.
  4. Now add the urad dal batter, ragi flour and salt to the rice batter and grind everything together until well mixed. The consistency of the batter should be similar to idli batter (neither too thick nor too thin).
  5. Remove from the grinder and mix it well with your hands. Leave it to ferment overnight or for 7-8 hours. Use a big vessel to prevent it from over flowing as it will double while fermenting. Our Ragi Idli batter is ready.
  6. Heat water in an idli vessel or steamer. Mix the fermented ragi idli batter well and pour a ladle of batter into the idli moulds and place it inside the steamer or cooker.

  7. Steam cook for 10-12 minutes or until a toothpick inserted in the center of the idli comes out clean. Once done sprinkle water and remove from the mould after 2-3 minutes.



Tips:

1)The batter should be thick, not thin or runny.

2)Dal and Rice should be grinded till it is smooth, a little grit in rice is not a issue, since rice would never grind to a smooth paste in mixie.

3)Dont add too much baking soda than mentioned, or it will affect the colour, texture and taste of idlies.

4)Use a large container when you are fermenting, because my batter rised too much and a little over flowed.

5)Dont steam the idli more than 15 mins, or it will dry up.

6) Ragi idli can be prepared with different methods.1st Method – Soak whole ragi grain – 1 cup, Idli Rice – 1 cup, Urad dhal – ½ cup, Fenugreek seeds – 2 teaspoons. Grind ragi and rice to a fine paste. Then grind urad dhal and fenugreek into smooth paste. Mix both these and add enough salt and make a batter. Keep it for atleast 8 hours for fermentation. Then make idli as usual.7) 2nd Method – Add a cup of ragj flour to the normal idli batter (about 2 cups of batter). Add a pinch of salt and ½ teaspoon “Fruit Salt” and mix it well and make idli.
8)With the same batter, we can make dosa also. Just add little water to the batter and make it slightly thinner than the idli batter. Heat Tawa and grease it. Pour a ladle of dosa batter and spread it to a thin circle. Pour a teaspoon of oil around the corners and cook for few seconds. Flip it over and cook other side also.
9) For variations,u can use whole ragi grains instead of flour.

10) If u want to try without rice,use 3: 1 ratio of ragi flour and urad dal.Add 2 tbsp of poha for softness.
