White sauce paste recipe |Penne Pasta in white sauce


I love italian cuisine .I normally have pasta or macaroni at home when i want something easy and not too time consuming. this recipe of vegetable pasta in white sauce get made at home often and is liked by everyone.



you can use your choice of veggies in the pasta like  baby corn, carrots, cauliflower, mushrooms and potatoes .I have not added the veegies as i was not in a mood to chop the same

I have used penne pasta but you can use any variety of your liking.








Ingredients

Pasta - 1 cup (I used penne pasta variety)
Milk - 1 and 1/2 cups
Maida(All Purpose Flour) - 1 tbsp heaped
Carrot - 1 small chopped finely
Sweet Corn - 1/4 cup boiled (i had not used )
Capsicum - 2 tbsp finely chopped (i had not used )
carrots cubed - 1/4 cup (i had not used )
Cheese - 2 tbsp grated
Butter - 1 tbsp
Chilli flakes - 1/2 tsp (adjust as per your taste)
Pepper powder - 1/4 tsp
Oregano/mixed herbs - 1/4 tsp
Salt - to taste


Method:
1.Cook pasta with enough water along with a tsp of olive oil and salt.Follow instructions on the pasta cover.Drain and Set aside.you can sprinkle a few drops of oil and gently toss them.

 drain the pasta



2.In a pan - heat a tsp of oil saute the veggies for 2mins,Set aside.
3.Heat butter in a pan when it starts to melt add maida.With a hand whisk,Whisk it well.Now add milk and keep stirring. Keep stirring until the mixture becomes slight thick and creamy.

4.Cook in low medium flame and keep stirring to avoid lumps. Add required salt.Add oregano and pepper powder.keep stirring till  the white sauce becomes thick, creamy and coats the laddle.



5.Next add the sauted vegetables, grated cheese, cooked pasta and give a quick mix.Switch off


6.Garnish with some cheese ,Sprinkle oregano  & Serve hot ....Enjoy!!

Tips :
1.Use veggies & pasta of your choice.
2.Make sure to stir continuously to avoid lumps.After maida is added whisk it well and use a whisk to mix after milk is added.
3.White sauce pasta gets dried up quickly so serve it as soon as you cook.If its gets thick and dry then add few tbsp milk and heat it up.
4.While serving add little grated cheese for extra richness and yumminess :)

Arrabiata sauce | How to make arrabiata sauce at home ?

I always love homemade easy pasta sauce recipes.

Arrabbiata sauce, or sugo all'arrabbiata in Italian, is a spicy sauce for pasta made from garlic, tomatoes, and red chili peppers cooked in olive oil. "Arrabbiata" literally means "angry" in Italian, and the name of the sauce is due to the heat of the chili peppers


This scrumptious tomato and garlic sauce goes perfectly with the always delicious penne pasta.  and may have chopped fresh parsley sprinkled on top.  There are many variations to the original recipe of arrabbiata sauce; a few include onions to be fried with the garlic and tomatoes.

Due to the small number of ingredients needed in order to make this sauce, it is quite inexpensive. 
Though most commonly used for pasta, arrabbiata can be used for other food. This sauce can also be used to accentuate or accommodate meats, poultry, seafood, bread and food similar to pizza


Ingredients

1/2 cup chopped tomatoes
1.5-2 cups tomato juice
2-3 tablespoons olive oil
1 onion, chopped
4-5 garlic clove, chopped
1/4 teaspoon chili flakes
2 -3 pinches basil, dried
1 Tbsp mixed herbs
salt and black pepper
1 pinch sugar
1/4 cup parmesan cheese, Grated
Red Wine (optional)-2 tbsp




Method:


1.In a small saucepan, gently cook the onion and garlic,green chilli in the olive oil until the onion has softened.


2.Add the chopped tomatoes with the tomato juice juice, chilli flakes, basil and sugar.


3.Season with salt and pepper,mixed herbs and simmer, stirring frequently for 20-30 minutes until its rendered to a nice thick sauce.


4 Add the cooked spaghetti pasta to the sauce,1/4 cup of reserved liquid and mix in well. Serve with grated parmesan.

5 Add slightly more Chilli if a hotter flavour is required.

Spaghetti Arrabiata |How to Make Penne Pasta With Arrabiata Sauce



Nowadays i keep trying lot of pasta recipes.Ever since I first tasted Pasta with Arrabiata sauce, I have been hooked to it. Also, been incessantly on look out for good recipes to replicate them at home.
A delightfully simple pasta dish with loads of flavour and more than a hint of chilli which blends so well with the tomato. Served with a generous sprinkling of parmesan cheese, crusty bread and accompanied with a nice glass of red wine. Its a meal to linger over.

You can also add Zucchini ,mushroom ,bell peppers if you like veggies .Adding more chopped Basil leaves adds to the authentic aroma.i have made using spaghetti but you can make it using any pasta.










Ingredients

200 -250 g penne pasta, dried
1/2 cup chopped tomatoes
1.5-2 cups tomato juice
2-3 tablespoons olive oil
1 onion, chopped
4-5 garlic clove, chopped
1/4 teaspoon chili flakes
2 -3 pinches basil, dried
1 Tbsp mixed herbs
salt and black pepper
1 pinch sugar
1/4 cup parmesan cheese, Grated
Red Wine (optional)-2 tbsp




Method:


1 bring a large pan of salted water to a boil.  Cook the spaghetti in the salted boiling water with 1 tbsp oil and cook according to the packet instructions.  Drain the pasta, reserving about ¼ cup of the cooking water.



2.In a small saucepan, gently cook the onion and garlic,green chilli in the olive oil until the onion has softened.



3.Add the chopped tomatoes with the tomato juice juice, chilli flakes, basil and sugar.




4.Season with salt and pepper,mixed herbs and simmer, stirring frequently for 40-45 minutes until its rendered to a nice thick sauce.




5 Add the cooked spaghetti pasta to the sauce,1/4 cup of reserved liquid and mix in well. Serve with grated parmesan.

BASIL PESTO PASTA |Basil Pesto with penne Pasta



Now here is a second pasta recipe on my site ie Basil pesto pasta.

Penne cooked with basil walnut pesto sauce - absolutely delicious .

Pesto is really a wonderful alternative to a tomato or cheese sauce for your pastas, though I will say there is no lack of Parmesan in this. 




 It’s super quick to throw together and has no shortage on flavor, so it’s perfect for a quick dinner that looks and tastes like it took much more work than it actually did.
It is just burst of flavors with the freshness from basil and the creaminess from nuts,cheese .

You can keep it simple or can add veggies of your choice while making this pasta as i did.





Ingredients:

2.5 cups penne pasta(or any other pasta)
3/4 cup basil pesto (click here for recipe)
1 onion,sliced
3-4 garlic pods,sliced
1 tomato,seeded and diced
1 red green yellow capsicum diced
1/4 cup broccoli florets
1 small carrot diced
1 tsp mixed herbs
1/2 tsp chili flakes
1/2 tsp ground pepper
1 tbsp grated parmesan(optional)
8-10 basil leaves,torn
2 tbsp extra virgin olive oil 
salt to taste




Method:

1.Cook pasta in a saucepan of boiling salted water, following packet directions until tender. Drain and reserve 1/2 cup of water for later usage.mix in one tablespoon of oil and rinse under cold water and spread in a big plate.

2.For the walnut pesto refer the basil pesto sauce recipe.



3.Heat two tablespoons of oil in a non-stick pan and add sliced garlic and saute until slight brown .next add thinly sliced onions and fry until they are pink and soft.Now add sliced capsicum,broccoli,carrot and diced tomato and saute it for few minutes.



4.When the tomatoes soften, crush them with the back of the ladle. Add the basil pesto, crushed red chillies flakes,ground pepper,torn basil leaves,mixed herbs and mix well. Add the pasta and mix well. Add milk and cook for another two to three minutes. 



5 Sprinkle the  parmesan cheese and  serve hot immediately garnished with basil leaves




Tips

1.You can replace penne pasta with any of the pasta like spiral,macaroni ,farfelle or any other pasta of your choice.
2. add any veggies as per availability
3.You can increase or decrease cheese as per your taste
4.Can skip veggies in above recipe and make the paste with basil pesto alone

Pasta salad |Tasty Italian market pasta salad |purple cabbage penne pasta salad with walnuts




Prepared with one or more types of pasta, usually chilled, and most often tossed in a vinegar, oil or I have dressing.
Make delicious and easy pasta salads -- a potluck and picnic favorite -- for your next event. 

Fresh veggies,nuts and chilled pasta provide gorgeous color, making this dish sure to attract grazers at any bash.



I have combined both mayonnaise-dressing with a light lemon-herb dressing which highlight this delicious -- and pretty -- pasta salad recipe.
Walnuts,purple cabbage give crunch, dates raisins gives bite, and red yellow belpepper gives zip to this Italian pasta salad recipe.
 Olive oil and apple cider vinegar (or, if you prefer, Balsamic vinegar) give it its Italian flair.





Ingredients

penne pasta or any other pasta  (about 1.5 cups uncooked)
1  cherry tomatoes, quartered
1  medium cucumber, halved lengthwise and sliced
4  green onions, sliced
5-6 dates cut lengthwise
half red,green ,yellow bell pepper cubed
half small purple cababge shredded
1 small raddish shredded
small brocolli florets blanched
carrot shredded

Nuts
1/4 cup dates
1/4 cup toasted walnuts
1/4 cup toasted pista /almonds

Dressing
2 tbsp  olive oil
2 tbsp lemon juice / apple cider vinegar
1  tablespoons  snipped fresh basil or 2 tsp. dried basil, crushed
1  tablespoons  snipped fresh oregano or 2 tsp. dried oregano, crushed
1 tsp mixed herbs
4  cloves garlic, minced
1/4  teaspoon  salt
1/4  teaspoon  ground black pepper
1/2  cup  crumbled feta cheese (optional)
1 tbsp  mayonnaise


Garnish

Fresh chopped parsley/basil leaves


Method:

1. Cook pasta according to package directions. Drain, rinse with cold water, and drain again.

2.combine all ingredients of dressing mentioned above and blend well with a whip.refrigerate

3. In a large bowl combine cooked drained pasta with nuts and other ingredients.

4. Drizzle dressing over pasta mixture; toss to coat.chexck seasoning and adjust accordingly.

5. Cover and chill in refrigerator for as least 1 hours or up to 5 hours. 

6.To serve, add feta cheese if using and toss well. Sprinkle fresh basil leaves and serve chilled



Tips
1 Use veggies as per avialability and choice
2.Can make a plain italian dressing with olive oil,mixed herbs,salt,crushed pepper ,vinegar and lime juice  and skip mayonnaise
3.Can increase amount of cheese and mayonnaise if you liKE CHEESY salad
4 can add basil pesto sauce to above salad
5.Can use Mustard and Dill Dressing or plain mayonnaise dressing
6 Can add pomegranate kernels or chopped grapes or chopped apples to abo

Roasted red bell pepper penne pasta recipe |penne paste with tomato red pepper pesto sauce


It was my long time wish to post pasta recipes on  chatpatkhana.com.

 I  am posting first pasta  recipe on my site i.e Roasted bell pepper sauce penne pasta or penne pasta with  Roasted bell pepper sauce



you can try this with any pasta variety like macaroni,spiral,farfelle ,bowtie,spaghetti etc
It came out great, tasted and smelt so good.






Its very easy to make also economical.so why not try your own homemade pasta rather than making readymade pastas ?






SERVINGS-2

Ingredients

penne pasta - 2 .5 cups (you can use any type of pasta like macaroni,spiral,farfelle ,bowtie,spaghetti etc)
Red bell pepper (lal simla mirchi) 1
Red ripe tomato 1
small onion 1 
Brown sugar / white sugar 1 tsp
Mixed Italian seasoning 1 tsp
Crushed red pepper(chilli flakes) 1 tsp
chopped parsley - 2 tsp
fresh chopped basil - 2 tsp
Crushed black pepper 3/4 tsp
Olive oil 3-4 tblsp
Garlic 5-8
10-12 Walnuts
 2-3 tbsp Parmesan cheese(optional)
Salt 1 & 1/4 tsp (Approx.)




Method:

Cooking pasta

1.boil about 6 cups of water .once water starts boiling add pich of salt and few drops of olive oil ,now drop pasta and stir properly
2.keep stirring in between ,cook pasta till al dente ( means just done ) for about 10-12 minutes or as per instructions on pasta packet
3.switch off gas drain pasta in a strainer(big galna which you use for soups ) ,reserve half cup of water in which we have cooked pasta for later use .
4. hold strainer under cold water (this will prevent pasta from getting over cooked ) &  drain the excess water completely. now mix 1-2 tsp olive oil in pasta and keep it in a plate

Making red peper pasta sauce


1.Wash and wipe the red bell pepper and tomato and apply oil all over it and roast them on open flame until they are charred completely by turning it to all sides.let it cool and Peel the skin off and chop them roughly.
2.Grind roasted,peeled and chopped bell pepper,tomato with walnuts,parmesan cheese,extra virgin olive oil,half garlic pods,black pepper powder and salt to a smooth puree.


Making red peper penne pasta

1. Heat olive oil in a wide bottomed pan and fry sliced garlic until slight brown and then add chopped onions and fry until they are pink and soft. 




2. add ground red bell pepper tomato puree  and mix well.Add salt,  sugar and the Italian seasoning. Crush between your palm while adding. Add red chilli flakes ,black pepper,chopped parsley,fresh chopped basil.



3. now add pasta and mix properly with sauce .Add 1/4 cup water( used during cooking pasta) if pasta becomes too dry and cook for 2 minutes 



4. now add grated cheese mix well and switch off gas

5.serve hot garnished with fresh chopped parsley and basil & grated cheese .





Tips
Add olive oil generously as mentioned.

Can add chopped veggies like carrots,broccoli,mushrooms ,babycorn,coloured capsicums  after step no 1 while Making red peper penne pasta and saute them till crunchy

Basil Pesto Recipe |home made fresh basil Pesto Sauce

  
Basil pesto sauce is my todays post .before that let me tell you what is pesto ?

Pesto (Italian pronunciation: [ˈpesto]) is a sauce originating in Genoa in the Liguria region of northern Italy (pesto genovese),
and traditionally consists of crushed garlic, basil, and European pine nuts blended with olive oil, Parmigiano Reggiano (Parmesan cheese), and Fiore Sardo (cheese made from sheep's milk).



The name is derived from the Genoese word pestâ (Italian: pestare), which means to pound, to crush, in reference to the original method of preparation, with marble mortar and wooden pestle. ingredients in a traditionally made pesto are ground with a circular motion of the pestle in the mortar. 




FRESH BASIL LEAVES






Typically, pesto is made with fresh basil, garlic, pine nuts, parmesan cheese, olive oil, salt and pepper,Fresh basil has a wonderful pungent aroma and an incredible flavor that is a cross between licorice and cloves. It is usually found with green leaves, but the Opal variety has intense purple color.

The traditional way of making pesto and still the best way is with mortar and pestle but You can use your blender or food processor if in a hurry or if you're making large quantities, 

Uses
Can use it with pasta , pesto on pizza, pesto sauce for fish, pesto vinaigrette for salads, black bean pesto, red bean pesto, cilantro pesto, arugula pesto,

hOW TO FREEZE

If you want to freeze the pesto you make, omit the cheese (it doesn’t freeze well).If freezing, transfer to an air-tight container and drizzle 1/4 cup  oil over the top. 
Line an ice cube tray with plastic wrap, and fill each pocket with the pesto.
 Freeze and then remove from the ice tray and store in a freezer bag. When you want to use, defrost and add in grated Parmesan or Romano.

Lets proceed to this simple but flavorful basil pesto recipe. 

INGREDIENTS
2 cups fresh basil leaves, packed
1/2 cup freshly grated Parmesan-Reggiano or Romano cheese
1/2 cup extra virgin olive oil
1/3 cup pine nuts or walnuts
3 medium sized garlic cloves, minced
Salt and freshly ground black pepper to taste
A food processor 

Method:

1.peel and chop garlic.pick basil leaves discard stems and wash them thoroughly ,pat them dry.grate cheese

2.In a mixie grind  basil, garlic, salt, and pine nuts /walnuts to a paste.Add the cheese and pulse a few times more. 



3.slowly drizzle in olive oil and grind till all the ingredients are pureed.

4 Stop to scrape down the sides of the food processor with a rubber spatula. Add a pinch of salt and freshly ground black pepper to taste.

5.Cover and refrigerate until you are ready to use it. This should keep for 2 - 3 days in the fridge but freeze well if you want to keep it longer. 

6.Serve with pasta, or over baked potatoes, or use in sanwiches or salads.

Roasted red bell pepper pasta sauce| Homemade tomato red pepper sauce for pasta


It was my long time wish to post pasta recipes on  chatpatkhana.com.  I  am posting first pasta  recipe on my site i.e Roasted bell pepper sauce pasta or penne pasta with Roasted bell pepper sauce.

 prior to that goes the recipe of flavourful sauce for making pasta made using beautiful red bell pepper and tomato.believe me this sauce tastes heavenly and you can use it in sandwiches or even while making noodles for your kids





It came out great, tasted and smelt so good.its very easy to make also economical and hygienic .so  do try this flavourful red bell pepper pasta sauce?

 







Ingredients

Red bell pepper (lal simla mirchi) 1
Red ripe tomato 1
small onion 1 
Brown sugar / white sugar 1 tsp
Mixed Italian seasoning 1 tsp
Crushed red pepper(chilli flakes) 1 tsp
chopped parsley - 2 tsp
fresh chopped basil - 2 tsp
Crushed black pepper 3/4 tsp
Olive oil 3 tblsp
Garlic 5-8
10-12 Walnuts
 2 tbsp Parmesan cheese(optional)
Corn flour(white) 1/2 tsp (optional)
Salt 1 & 1/4 tsp





Method:

5. Add 1/4 cup water and bring to boil.Simmer for 5 minutes and add corn flour dissolved in 2 tblsp of water. Boil until oil separates and the sauce becomes shiny and thick.



6.Cool and transfer to a jar and keep refrigerated, use within 3-4 days.

Tips:

Add olive oil generously as mentioned.
Adding corn flour is for thickening and its purely optional
Can add chopped carrots to above sauce
