Punjabi Aloo Puri recipe |North indian aloo ki sabji



Vow my mouth starts watering at the mention of aloo poori combination.Now aloo sabji is made in various ways in India. It can be dry or gravy as per ones taste...

todays recipe is punjabi style aloo sabji made with onions & tomatos with spices in a pressure cooker for faster cooking.
I made this with pressure cooker, but you can easily make it in a sauce pan. 

This has become my favourite combo.this is eaten as breakfast in many north indian homes .You can make it on any festival occasion too.A really delicious aloo tamatar curry which goes great with poori or bhatura. Love the little spicy, tangy curry a lot. It is pretty simple to make as well.

Ingredients:

Oil - 2 tblspn

Carom Seeds / Ajwain / Owa - 1/2 tsp
Onion - 1 large chopped finely
Green Chillies - 1 slit
Ginger Garlic Paste - 1 tsp
Tomatoes - 3 large pureed
Potatoes - 2 large peeled and cubed
Chilli Powder - 2 tsp
Turmeric Powder 1/2 tsp
coriander powder – 2 tsp
cumin powder – 1 tsp
Salt to taste
Garam Masala Powder - 1 tsp
Amchoor Powder / Dry Mango Powder - 1/2 tsp
kasuri methi - pinch
Coriander Leaves  a handful finely chopped



Poori



Method:


1.Heat oil in a pressure cooker, add in some carom seeds and sizzle it for a min.


2.Add in onions and cook till golden.
Add in green chillies and ginger garlic paste.Saute for a minute
3.Add in tomatoes and cook till oil separates.
Add in salt, chilli powder ,cumin coriander powderand turmeric. Mix well.

4.add in potatoes and 2 cups of water . Pressure cook for 3 whistle, simmer for 5 mins, turn off the heat and let the steam go all by itself.


5.Now open the cooker,mash few potato to thicken curry and add in garam masala powder and amchoor powder.,kasoori methi .Mix well.


6.Add in coriander leaves and mix well.


7.Serve
with hot piping pooris or bhatura

Tips:
1.can use jeera instead of owa
2.in absence of cooker ,cook the sabji covered with a lid till potatoes are cooked ,keep checking in between.
3.adjust the spices as per your taste
