Bhuga Chawal is the special Sindhi delicacy. Here rice are cooked in lots of carmelised onion and flavored with the veggies and whole garam masala. You can add the veggies of your choice to make these Sindhi style bhuga chawar or bhugal rice. Sindhi’s most probably serve these bhuga rice either with sai bhaji (spinach) or fried potatoes.
Yesterday I decided to go for a sindhi meal & served aloo tuk with sindhi bhughe chawal.The recipe source is sindhirasoi.com.I made some modification to it to suit to our taste.This dish is easy to prepare.
Serves - 2
Ingredients :
Basmatic Rice 1 cup
Onion 1
Tomato -1 ( i had not put since i didnt have it)
Red chilli powder 1 tsp (Increase as per your taste)
haldi powder - 1/2 tsp
green peas - 1 cup
potato -1 medium chopped to cubes
Khada masala
Jeera (cumin seeds)
Tejpatta (bay leaf) 1
Cloves 2-3
Black cardamon, 1 OR 2 green cardamom
Dalchini 1 inch stick
Salt as per taste
ghee /butter 1 tbsp
Method:
1. Wash and soak rice for half hour .
2.Put one tbspn of Ghee in kadhai and khada masala.saute for 2 minutes .next add sliced onion
3.Fry on medium flame till onion turns dark brown in colour (be careful not to burn it).
4.Now add tomatoes , peas & . add litte water till potato are just covered with water &keep a lid on kadhai & cook till potatoes are done.
5.Add redchilli powder, (and garam masala powder in case khada masala is not used) and rice and fry for about a minute.
6.Add water, double the quantity of rice , add salt and let it boil.
7.Simmer and cover it with a lid till rice is cooked.
8. Serve piping hot with aloo tuk & Sindhi Saibhaji .
Tips:
1.You can use garam masala powder instead of khada or whole garam masala.
2.You may add veggies like carrot, cauliflower or any veggie of your choice.
