Papri Chaat, Paapri Chaat or Papdi Chaat is anorth Indian fast food. Chaat, an Indo-Aryan word which literally means lick, is used to describe a range of snacks and fast food dishes; papri refers to crisp fried dough wafers made from refined white flour and oil. In Papri Chaat, the papris are served with boiled potatoes, boiled chick peas, chilis,seasoned yogurt and tamarind chutney and green chutney.
The popular dish is often eaten from travelling food vendor stalls.
Chaat can be found on roadside food carts all over India. Chaat is basically different varieties of snacks served with tamarind or hari (cilantro) chutney or with hot spice mix. The definition of chaat literally is “to taste”.
This particular chaat, Papdi Chaat, is made of crispy wafers known as papadi garnished with a delicious combination of potatoes, chickpeas, seasoned yogurt, and flavorful spices and chutneys, topped with chaat masala and 'sev'.
Ingredients
25 papdis/puris
1 cup cold dahi /curd/yogurt
1 large potato, boiled and mashed
2 cups boiled chickpeas/kabuli chana/garbanzo beans
1 Onion finely chopped
1 tomato finely chopped
½ cup chopped coriander leaves
1 cup mint coriander chutney
1 cup tamarind dates chutney
1-2 tsp red chili powder
1-2 tsp cumin powder
1-2 tsp chaat masala
1-2 tsp black salt/rock salt or common salt
1 tbsp lime juice
1 cup yellow sev /shev
Method:
1.Mix dahi with 2 tsp water & whisk it till it turns smooth
2.soak the chickpeas in enough water overnight or for a 7 -8 hours.and then pressure cook the chickpeas with water and salt/black salt till completely cooked.
3.place about 7-8 papdis in a plate.next place mashed boiled potatoes and cooked chickpeas on papdis
4. Add chopped onions and tomatoes on it sprinkle some chaat masala,cumin powder ,red chili powder on it
5 With spoon add cold yogurt/curd on top of each papadi ( i have added 2 tsp on each but you can add as per your liking).
6.add the green chutney and sweet chutney as per your wish after that sprinkle some chaat masala, red chili powder, cumin powder and black salt.
7.Lastly sprinkle sev on top and garnish with coriander leaves.
8.Just to pep it up you can add dash of lemon juice to the papdi chaat but this step is purely optional.
9.serve papdi chaat immediately & let it melt in your mouth
Tips :
1.Addition of curd ,spice powders ,chat masala and is entirely as per your spice taste.i had added 2 tsp of dahi for my chat whereas for husbands bowl i topped with generous amount of dahi .both can be seen below
2. You can even garnish it with anar dana (pomegranate seeds)
