Kairi Ka Sharbat ( Raw Mango Squash ) ... A delicious & refreshing fruit squash made of unripe / raw mangoes, water and sugar. This drink is very effective to prevent from heat and sunstroke. Perfect thirst quencher for hot summer days!
Aam Panna OR Kairi Panha- It's an excellent drink for hot summer.This tangy raw mango and mint drink or squash is a very delicious and refreshing ,mainly consumed in the northern part of India. Its an excellent and instant thirst quencher ,great way to beat the heat, known for it's cooling effects and prevent from heat strokes and heat exhaustion..You can make this fresh as panna OR make it in a concentrated form as squash and bottle and use through out the year.
Give them to your kids when they come after the school or whenever they feel like drinking something cold and chilled in this scorching summer heat.
INGREDIENTS-
Raw mango pulp-2 cup (Use 2 large raw mango/kairi or 3 medim size kairi)
Sugar- 3.5 to 4 cup
Black salt/normal salt -1.5 t.s
Citric acid(taatri,nimbu phool)-1/2 t.s
Green food colour-2 drops (optional)
Method:
1. Pressure cook whole raw mangoes with little water for 3 whistles.Once it cools, remove the outer green skin & cut into small pieces .Or else you can Wash, peel the skin of unripe mangoes. Cut into small pieces and then pressure cook them
2..Now add mango pieces in the mixer jar and grind to make a paste.
3.Take sugar in a pan ,add 1.5 cup water and boil on medium heat.keep stirring continuosly to make a syrup of 1 thread consistency (ek tari paak) .add citric acid and mix.
4.Now add salt and mango pulp and give it a boil.Keep aside and let it cool down completely.
5. Mix in the food colour and store in a glass bottle.
6.Keep refrigerated.or else add preservative(sodium benzoate-2 gms)
For Serving
1-Take 3-4 tbsp of squash in a glass ,add ice ,chilled water mix and serve.
2- Take 3-4 tbsp of squash in a glass ,add aerated drink like seven up ,limca or sprite or club soda ,mix and serve.
3.Can add few drops of lemon juice before serving
4 Can add 1 cup of mint leaves ,roasted cumin seeds & black salt while making mango pulp in step number 2
Tip
You can also make it with yellow mango.Ripe mango squash will give a sweet taste and its color will be yellow.
Unripe green mango squash has a sweet and sour taste and its color is light green.
