Spinach corn recipe| Makai palak | palak corn gravy





I love corn & we make it a point to include spinach (palak)weekly in our diet due to numerous health benefits of palak.


 

presenting delicious spinach corn recipe

 

Ingredients:
1cup american sweet corn / 1 corn cob
1 big bunch spinach
1 big onion,diced
1 small onion,finely chopped
1/2 inch ginger piece
1 tsp Ginger-Garlic paste
4-5 green chillies
2 tsp coriander powder
1 tsp roasted cumin powder
1 tsp Garam masala
a pinch of sugar
1/2 tsp kasuri methi(optional)
1/2 tsp amchur powder
2 tbsp fresh cream(or 1/4 cup milk) or 2 tbsp dahi
salt to taste
1-2 tsp lemon juice
1/2 tsp cumin seeds
1 tbsp butter
1 tbsp oil

Method:

  1.  Boil water in a kadhai  add cleaned spinach leaves,pinch of sugar and green chillies and blanch for a minute.now immerse spinach in cold water .Strain the spinach and  blend spinach with green chillies,ginger to make a paste Or else you can even saute the spinach quickly in a kadhai till it shrinks & then grind it with green chilli & ginger .after making paste keep the mixer open,otherwise green colour will change

   
   2 heat a  tava (griddle) & Grill the corn on the flame until light black spots appear all over the cornsqueeze lemon juice with salt over the corn and keep aside for 10 minutes,saute onion cubes in kadhai for 2 minutes & let it cool
   3. Grind sauted onion with ginger and garlic paste and keep it aside.

  4.  Heat oil and butter in a big kadai and crackle cumin seeds,add finely chopped onions and fry until translucent and add ground onion mixture and fry well.





    now mix coriander powder,cumin powder,amchur powder, kasuri methi and mix well.

   5. Add spinach puree and cook over medium flame.Add salt,grilled corn kernels,and garam masala and mix well.If required add the strained water to dilute the gravy to get the required consistency and cook for 2 minutes.Do not cover the kadai while you are cooking,otherwise you will loose the green color of spinach.



 

  6.  Add cream(or milk) and mix well and cook for one minute and remove it from stove.Add lemon juice and give a quick stir.

7.Serve it hot with  chapati or roti or basmati rice.


 

Note:
 
  1. Instead of sweet corn you can use corn cob in above recipe
  2. add 1 tsp of pepper powder for extra hotness
