Gajar Ka Halwa | Delhi Carrot halwa








Everyone loves to savour the traditional flavours of home-made mithais.now being winter season you get lots of delhi carrots (red carrot) in market .Had got a bunch last week with intention of making  gajar halwa as I love to prepare this recipe with Delhi carrot .



Gajar Ka Halwa  (sometimes known as Punjab Gajrela, Carrot Halwa or gajar ka gajerela) is a sweet dessert pudding associated mainly with the state of Punjab in India. It is made by placing grated carrot in a jar containing a specific amount of water, milk and sugar and then cooked, stirring regularly. It is often served with a garnish of almonds and pistachios. The nuts and other items used are first sautéed in ghee, a South Asian clarified butter.


Earlier i have posted a diet or less calorie gajar halwa recipe made using milk powder but todays recipe is loaded with calories using either condensed milk or mava (khoya).


Ingredients:
Carrots    8-10 medium (about 2 cups)
Cashewnuts    5-6
Almonds     5-6
Raisins     10-15
Pure ghee    3 tablespoons
Milk     2 cups
Green cardamom powder     1/4 teaspoon
Mawa (khoya)   1 cup or 1/2 cup condensed milk
Sugar     3/4 cup





 


Method:
 
1.Peel, wash and grate carrots. 








 









2.Chop cashewnuts. Blanch almonds in half a cup of hot water for five minutes. Drain, cool, peel and slice them. Wash raisins and pat them dry.

3.Heat 1 tbsp ghee in a thick-bottomed pan, add grated carrots and sauté for five minutes. Add milk, green cardamom powder and cook on medium heat for five to six minutes or until the milk evaporates and the carrots are cooked. 




 


4 Stir in the grated khoya and sugar and cook for two to three minutes or till the sugar melts and mixes well, stirring continuously. add remaining ghee & cook till ghee separates.






5.Continue to cook for two minutes more. Garnish with chopped cashewnuts, sliced almonds and raisins.

6. Serve hot or cold . 



 



Tips:

If using condensed milk then use less sugar (1/4  to 1/2 cup) since condensed milk has sugar in it.

 If you want to reduce calorie count in this then prepare with  milk powder  and add sugar free instead of sugar.



You can add little saffron to the  halwa.
