Cream of broccoli soup









 
















A creamy, delicious soup that can be enjoyed hot during winters. Broccoli is a great way to add iron into your diet, and this soup is just the perfect way to include broccoli in your meals, especially if your family likes drinking up soups.

Nutritious and satisfying, this cream of broccoli soup recipe makes for a quick and easy meal. Its velvety smooth texture, along with a subtly fresh, creamy flavor, will make this pureed soup a favorite with broccoli lovers.
Serve it hot garnished with blanched broccoli florets.


Ingredients:
    2 teaspoons butter
    1/2 onion finely chopped onion
    2 garlic cloves
    1 cups chopped fresh broccoli
     2 1/2 cup milk
   2 tbsp plain flour (maida)
    salt as per taste
    1/2 teaspoon ground pepper
   1/2 tsp garam masala
    1 tsp sugar
    1/16 teaspoon ground nutmeg (optional)

Garnishing


    Bread croutons or sauted brocoli


 


Method:
1.In a large saucepan set over medium heat, sauté the garlic chopped onion in butter just until it turns translucent and tender.

 

2. Add ¾th of the broccoli and sauté on a medium flame for a few minutes.
Add  little milk  and cook on a medium flame till the broccoli is cooked. Remove and keep aside to cool.
 

 

3.Blend in a mixer to a smooth purée. Keep aside.





4.Heat the remaining  of butter in another deep pan, add the flour and sauté on a medium flame for a minute taking care that the flour does not discolour.






5.Add the milk and simmer for 5 minutes, while stirring continuously.

6.Add the salt, pepper and garam masala ,sugar and mix well.

7.Add the broccoli purée, mix well and simmer for another 3 to 4 minutes.






8.Serve hot garnished  blanched broccoli florets or bread croutons
.
