Vegetable Frankie -Mumbai style | Veg paneer kathi roll



Frankie is a simple wrap filled with various kind of fillings you want ranging from a basic potatoes and onions mixture, to   cheese, paneer, potato- green peas ,fresh vegetables,chinese ,jain mixtures .Great for lunches, snacks, parties, picnics or road trips

Veg frankie is  a popular and cheap version of the hi-fi veggie wraps and rolls.It is made with a very tangy and spicy potato, and peas mixture. The tangy taste of chillies in vinegar and chaat masala is very enjoyable! one of the most interesting and practical snacks to devour on the go!

Todays post recipe is about  Mumbai style Vegetable Frankie.... The recipe is so simple and awesome.. 






Ingredients :

For the Dough:

1 Cup Plain Flour (Maida)
Salt to Taste,
Luke Warm Water as Needed,
Oil to Shallow Fry,

For Filling:

Paneer – 3/4 cup  
Cheese - 2 cubes
 Potatoes – 2 small, boiled, peeled and grated
Capsicum finely chopped - 1
 Salt – 1/2 tsp or to taste
 Coriander Powder / Dhaniya Powder – 1/2 tbsp
 Garam Masala – 1/2 tsp
 Amchoor Powder (Dry Mango Powder) – 1/2 tsp
 Red Chilli Powder – 1/2 tsp
 Oil – 1 tbsp
 Green Chillies – finely chopped, to taste
 Onions – finely sliced, as needed
 Cilantro – finely chopped, as needed
 Lemon/Lime Juice – to taste

For Spicy Onion Mixture:
1 Small Onion, Finely Chopped,
½ Teaspoon Oil,
½ Teaspoon Chili Powder,
1 Teaspoon Chaat Masala,

For Spicy and Tangy Water
¼ Cup Water,
½ Teaspoon Chili Powder,
½ Teaspoon Amchur Powder (or chaat masala),
Salt to taste

Tamarind khajur chutney


Method 

Filling

1. Crumble the Paneer and add in the Potatoes& capsicum pieces.
 2. Mix but be gentle not to make a paste of the mixture.
 3. Add in the spice – Salt, Coriander Powder, Amchur, Garam Masala & Red Chili Powder.
 4. Mix again to ensure that the spices don’t clump up to one area and are well distributed.
 5. Heat Oil in a non-stick pan or a kadhai.
 6. Add in finely chopped Green Chillies and then the Potatoes and Paneer mixture.
 7. Mix gently and allow the filling to get heated all the way through for just a couple of minutes.
 8. Once hot, turn off the stove/flame and add in finely sliced Onions and Cilantro.
 9. Squeeze Lemon or Lime juice to taste and give it one final mix.
 10. Transfer to a bowl to allow the mixture to cool down to make cylindrical rolls to fill in the roti. 



Rotis:

1.Combine all the ingredients in a bowl and knead into a soft and pliable dough using enough water.
2.Cover the dough with a wet muslin cloth and keep aside for 10 minutes.
3.Knead again using ¼ tsp of oil till it is smooth and elastic.
4.Divide the dough into 4 equal portions and roll out each into approx. 200 mm. (8") diameter thin circle.
5.Heat a tava (griddle) and cook each roti lightly on a medium flame and keep aside.



Tangy Onion Mixture:
Combine all ingredients to make the onion mixture and set aside. You can adjust the quantity of chili powder and chat masala to your taste.

Spicy and Tangy Water: 
Combine all ingredients and set aside. You can adjust the quantity of chili powder and chat masala to your taste.

Assembling frankie :

1.Heat a skillet or a not stick pan on medium low heat. Spread a few drops of  butter on the skillet. Now place a roti and cook until the underside just starts to cook (about a minute). Now flip it and apply the tangy water on the top surface. 





2.Now put the Potato mixture  in the center of the roti. If you are adding cheese, add it now.




3.Sprinkle the onion mixture over the cheese. Top it with some imli chutney














4.Let it cook at medium low heat for ½ a minute then fold the side edges over onto the potato filling. Carefully flip over and cook for another ½ minute. If you wish, you can spread some  butter around the edges of the roll. 














5.Take off the heat and  top it with dots of imli khajur chutney  & serve with tomato ketchup.
