Sprouts rice | khichdi | Sprouted moong matki pulao


This is a smart way of including sprouts in your daily meal as this rice is not only spicy & tasty but addition of sprouts makes it healthy too.

We are normally advised to eat sprouts by doctors but we end up preparing moong sprout salad /moong sprout sabji . This rice is a good option for including sprouts in your daily meal .

I had seen this recipe on a marathi tv channel show called as mejwani paripoorna kitchen (recipe by chef vishnu manohar) . Since then i make this atleast twice a month. My husband who is fussy about eating sprouts also ate this rice without any complaints.

This can also be a good option for kids lunchbox (khaucha dabba)





SPROUT RICE



Ingredients:
1 cup basmati rice
1 green chilli slit
1 onion chopped
1 tomato chopped
3/4 cup moong (green) / matki (moth beans) sprouts  (You can use even masoor /chana sprouts )
1 tsp ginger garlic paste
1 tsp red chilli powder
1 tsp pav bhaji masala /garam masala / chana masala
1 tsp sugar
1 tsp dhane jeera powder
1 tsp lemon juice /tamarind juice
salt to taste

Tempering

1 tsp jeera (cumin)
1 tsp rai ( mustard)
4-5 curry leaves
2 tbsp oil /ghee
1 tsp hing (asafoetida)

Garnish

Tomato slices + coriander leaves





Method:

1. Wash the rice till water runs clear and soak in water for 30 minutes.After 30 minutes drain & keep aside.

2. Make a fine paste of the above mentioned ingredients to be ground in mixie adding little water.

3. Melt the butter in a pan or pressure cooker whichever you intend to use Add  jeera ,rai .Once jeera crackles add the onions,ginger garlic paste & chopped tomato. Fry this well on a medium flame till the raw smell fades and also it leaves oil on the sides. Be careful not to burn.



5. Throw in the pav bhaji masala /garam masala / chana masala, dhane jeera powder,sugar,red chilli powder,sugar & mix well now add sprouts & again saute for
 minutes.




6. Add rice and fry till the rice becomes transparent. Now  pour in  about 2 cups of water. You can use the same proportion for water depending on the rice you use.Adding little less than equal will be good else the basmati rice can be mushy & also looks over cooked.



7. Add salt, lime juice  and mix well. Cook for 1  whistles if using a pressure cooker & let pressure release by itself.

If cooking in a pan or kadai then cover with lid when rice is cooked 60% & water is almost absorbed.Keep checking periodically so that the rice doesn’t stick to the bottom and sprinkle water if needed. Cook till the rice is done and make sure the grains are separate and not sticky.

8.  Serve along side with mix veg  raita /cucumber raita / cuccumber slices  & fried papad.



Tips:

1.Use any sprouts  of your choice,you can even add paneer,potato cubes
