Red Cabbage Salad Recipe | Purple cabbage carrot radish salad


Last week I had got purple cabbage with an intention to make salad .Making this salad was on my to do list since many days.Finally I made it on monday during my husbands fast instead of frying papads.









Ingredients :

2 cups finely grated red cabbage (about 1/2 cabbage depends on size )
1/4 cup green onion ( scallions/spring onions/normal red onion)


1/2 -1 cup sliced carrots or red bell peppers
1/2 cup shredded raddish
1/4 cup chopped coriander/cilantro
2 tablespoons seedless raisins - black or golden
8 roasted walnut haves or 3 tablespoons roasted pine nuts or 3 tbsp roasted almonds

Dressing

1/2 tsp  minced fresh ginger  or 1/2 tsp minced fresh garlic



1/4 cup finely chopped fresh cilantro
1 tsp fresh squeezed lemon juice/vinegar
2 tsp peanut oil
3 soy sauce (low sodium is ok)
2 tsp pepper powder
1 tsp sugar or honey








Method:
1.Wash cabbage under cold running water. Drain. Remove any wilted outer leaves.Cut cabbage in half, and then cut in half again. Cut the cabbage as thinly as possible.




2.Rinse green onions and finely chop.Shred raddish & carrot as thin & add in bowl with cabbage.
3.Toss in raisins, walnuts, or pine nuts.
4.Place oil, vinegar,honey,pepper powder and lemon juice in a bowl and thoroughly mix, using a whisk. When ingredients are smooth and satiny, the dressing is ready. Taste for flavors and adjust if needed. Pour dressing over salad and mix thoroughly to coat all ingredients.
5.Refrigerate both veggies & salad.
6. At time of serving mix vegetables with salt in large salad bowl and toss with dressing. Arrange salad on individual plates and garnish with chopped cilantro






Variation :




  • Replace Carrot with bellpeper / boiled sweet corn
  • For extra protein, pumpkin seeds are delicious, especially if they are soaked for 6-8 hours.
  • Add 2  tsp  roasted sesame (til) seeds or roasted peanuts  to above salad
