Kobi means cabbage in marathi.This sabji can be prepared by adding potato or split bengal gram dal (chana dal) or you can even add a combo of both potato & chana dal .If using chana dal soak it in lukewarm water for 1 hr prior .here i have mentioned adding both chana dal & potato you can add either as per your liking .
Personally I dont like cabbage sabji so I try to eat it in other forms such as cabbage paratha ,cabbage chutney ,cabbage pachadi .
Ingredients :
1 cup cabbage chopped finely
1/4 cup chana dal ( bengal gram, split )
1 small potato chopped
1 onion chopped
3-4 green chilies,
pinch hing /asafoetida,
turmeric powder,
1 tsp rai( mustard seeds)
1 tsp jeera (cumin seeds)
4 teaspoon oil
coriander leaves,
salt,
sugar
Method
1. Wash cabbage, chop it finely and keep aside .You can even shred (cut it into long strips) the way we use for chinese fried rice
2. Soak chana dal in the warm water for half an hour.
3. Chop green chilies and coriander leaves.
4. In a pan, heat oil and add jeera,mustard seeds. When it splutters add green chillies, asafoetida ,soaked dal & chopped onion.Mix well
5. Add potatoes & turmeric . cover with lid & cook till potato is cooked & onion becomes transparent .
6. Now add chopped cabbage and mix well. Cover for 10 minutes. keep checking in between or else cabbage will get burnt .
7. Remove the lid and if the cabbage has turned soft, add salt and sugar. Mix and cook a minute longer.
8. Garnish with coriander leaves.
9.Serve hot with Chapati.
Tip:
1 Variation can be done by adding 2 tsp peanut powder in above sabji.
2.You can use either chana dal / chopped potato pieces or green peas in above saabji
