Malai Kofta recipe |Mughlai malai kofta White Creamy Gravy |hotel style malai kofta curry



Malai Kofta is a classic North Indian dish belonging to  Mughlai cuisine. Malai refers to the cream and  koftas are deep fried paneer potato dumplings stufed with cashew & raisins .Restaurant style malai paneer kofta  are served in either  rich and creamy tomato gravy or white cashew cream gravy.



 
 

Cashew nuts and raisins stuffed soft malai kofta and that to with cashew nuts, curd and cream gravy sound too delicious. 

Whenever you have a special occasion at your place try this mughlai malai kofta curry and surely everybody will find it tasty. It goes well with chapati, naan, jeera rice, all pulaos and parathas.

Your mouth will start watering and would love to eat it .


Best side dish for  malai kofta curry are tandoori roti , naan ,triangle paratha , puri or
amritsari stuffed kulcha.




Ingredients for Malai Kofta Curry

Malai KoftaPaneer - ½ cup  grated
Mawa/milkpowder - ½ cup 
Corn flour - 2 tbsp  or bread crumbs - 1 cup
Cashew nuts - 8-10
Raisins(golden manuka) - 1 tbsp
Green cardamom- 1 tsp
potato medium boiled & grated - 2
Salt/black salt - ½ tsp
Black pepper(kali miri powder) or red chilli powder - 3/4 tsp
chopped coriander leaves - 2 tbsp
Oil - to fry kofta

 White Gravy for Malai KoftaOil- 2 tbsp+1 tbsp butter
Cashew nuts - 1/3 cup
Muskmelon seeds - 1/ 3 cup
onion medium -2
poppy seeds (khas khas) - 2 tsp soaked in milk
Cream - 1 cup (200 grams)
Curd - ½ cup (100 grams) or milk 1/2 cup
Green coriander - 2-3 tbsp (finely chopped)
Cumin seeds - ½ tsp
Garam masala to grind - (2 brown cardamom, 6 black pepper, 2 cloves, ½ inch cinnamon stick)
Ginger - 1 inch piece (grated or 1 tsp ginger paste)
Green chilly - 1-2 (finely chopped)
Coriander powder - ½ tsp
Salt - 1 tsp
Red chilly powder - ¼ tsp
kasoori methi -1 tsp
sugar - 1 tbsp

garnish
2 tbsp grated paneer (indian cottage cheese)
1 tbsp coriander leaves (kothmir)




Method:


Kofta
1.In a bowl add boiled grated potato, paneer, Mawa/milkpowder,half amount of corn flour,bread crumbs,coriander leaves and black pepper /red chilli powder ,salt ,and mix all ingredients until you get soft dough.



2.Mixture for making kofta balls is ready.

3.For stuffing of  the kofta balls mix cashew nut pieces, raisins and cardamom powder. Stuffing for kofta balls is ready.

4.Take lemon size mixture of dough and make round shape. Flatten it with you palms & make a dent(hole) in center with your finger  and place 3-4 pieces of cashew nuts and 2 raisins. Seal it from all sides nicely so that they do not splatter while frying.Roll it to a round  or flat shape ( i had made them flat as it needs less oil to fry .)



5  next  roll  the ball in corn flour nicely so that ball gets coated uniformly with cornflour and place on the plate. Like wise prepare all balls.


6.Heat oil in a pan. Make sure the oil doesn’t get heated up or is too cool. In medium hot oil place 2-3 balls. (see tip 1)


7 Cook until they get light brown color. Fry remaining balls also.



White Gravy for Malai Kofta Curry

1. soak cashew nuts,poppy seeds and muskmelon seeds in warm water for ½ hour or in normal water for 2 hours then finely grind the soaked cashew nuts ,poppy seeds and muskmelon seeds .next add dahi and cream to this paste & grind it to a fine paste.



2. for second paste ,saute onion pieces in 1 tsp oil till raw smell goes ,cool it & grind it with ginger & green chilli. below seen are both paste cashewnut poppy dahi cream paste & onion garlic chilli paste




3.Grind all spices. Take brown cardamom , black pepper, clove and cinnamon stick and grind them coarsely.

4.Preheat a pan and heat oil & butter. Add cumin seeds, onion ginger chilli paste & saute well .next add grind spices in step 3, . Lastly add cashew nuts ,muskmelon,dahi & cream paste in the pan. Cook until oil starts separating from the masala. 



5.Add coriander powder, red chilly powder,. Mix all ingredients well and cook until it starts boiling. Add 1-1.5 cup of water. Stir continuously until the gravy starts boiling. Add salt, sugar, kasoori methi ,butter and green coriander and cook for 2 minutes more.malai kofta Gravy is ready.



6 Just before serving add kofta balls in gravy ,garnish with grated paneer & coriander leaves .

 Serve malai kofta curry with tandoori roti , naan  ,triangle parathapuri or
amritsari stuffed  kulcha.





Tip:

1 if balls break when you put them in oil add 1-2 tsp of cornflour/breadcrumbs in dough mix well & roll them again & then fry .

2.You can even serve kofta gravy in different manner Keep gravy and kofta balls separately. Take  three kofta balls in a bowl and pour two tbsp of gravy on top, garnish with  grated paneer ,coriander leaves and now serve.

3.You can even use milk instead of curd. Add milk with normal temperature in the gravy and stir continuously.
