Methi muthia recipe| gujarati steamed methi nu muthiya low calorie version



A tasty delicious and healthy tea time  snack from gujarat .Methi means fenugreek leaves
the  name muthia is derived from the way it is made, from the 'gripping' action of the hand. It is made up of Chickpea flour,Wheat flour, Methi (Fenugreek), Salt, Turmeric, Chili powder, and an optional bonding agent/sweetener such as sugar and oil.

You can add jowar or bajra flour to make it more healthy.



It is a very good staple of Gujaratis. This dish is supposed to be good for keeping bowel movement regular, because it includes fenugreek.

This dish can be eaten steamed or fried ,it is equally tasty either way.This methi muthia taste very delicious though they are steamed.


 I have fried the same but you can even steam it too.you can also temper the steamed muthias & have it with chutney & sauce.

Muthia are an important part of famous gujarati dish undhiyo/oondhiya

Undhiyu is a Gujarati mixed vegetable dish that is a regional specialty of Gujarat, India. The name of this dish comes from the Gujarati words "matlu" meaning earthen pot and "undhu" meaning upside down since they have been traditionally cooked upside down underground in earthen pots fired from above.

The dish is a seasonal one, comprising the vegetables that are available on the South Gujarat coastline during the winter season, including (amongst others) green beans, unripe banana, muthia, and purple yam. These are cooked in a spicy curry that sometimes includes coconut.


 


Ingredients:
Methi leaves (Fenugreek Leaves) – 1 cup
Whole wheat flour (chapatti atta) – 1 cup
Besan (Chickpea flour) – 1 /2 cup
Sooji (Semolina or rawa) – 1 tablespoon
Ginger green chilli paste – 1 teaspoon
red chilli powder - 1 tsp
curd - 1 tbsp
coriander cumin powder (dhane jeera powder) - 1-2 tbsp
sesame seeds (til) – ½ teaspoon
 Oil – 1 tbsp
Lemon juice – 1 tablespoon
Sugar – 1 teaspoon
Baking soda – 1/8 teaspoon
Salt – to taste


For Tadka
Oil – 2 teaspoons
Mustard seeds – ½ teaspoon
Sesame seeds – 1 teaspoon




method:
1.wash and chop  methi leaves. take methi leaves  in a bowl. Sprinkle some salt on it. And leave it side for 10 minutes.











 2.  add all ingredients except  oil   and water & mix it well ,now add oil and little water as required and make a hard dough











3.Divide dough and shape  it into oblong muthias with your hand.




4 Deep fry them in oil until golden brown.



5.drain on  a paper tissue to get rid of excess oil


6.Serve  hot with tea or chutney or sauce


7. For Low calorie methi muthia,after step no 3 steam muthia in a steamer or cooker for 15 minutes .Then make a tadka in pan adding oil,mustard seeds & sesame seeds & add steamed muthia & saute it for 2-3 minutes . serve hot with tea & chutney.
