Sindhi dal
I had seen this Dal on one of the rasoi shows on zee tv & since then I couldnt wait to cook this delicious recipe in my kitchen .sindhi Dal pakwan is a typical, Authentic Sindhi breakfast. pakwan is deep fried, crisp, unpuffed Maida (all purpose flour)puris, flavored with salt, pepper and Ajwain, served with Chanadal sindhi style.You can make Dal Pakwan on Sunday's and holidays. This will add to a variety in the breakfast menu for your family members.
Pls note sindhi dal is made with chana dal but I tried with toor dal & served it with basmati rice .will post the recipe of sindhi pakwan sometimes later .
Ingredients
1 1/2 cups chana dal or (Toor dal/tuvar dal/pigeon peas dal)
4 tablespoons oil
1 teaspoon mustard seeds
1 teaspoon fenugreek seeds (methi)
1 teaspoon cumin seed
1 onion chopped
10 fresh curry leaves , washed and torn
3 inches fresh ginger , peeled, washed and finely chopped
2 teaspoons asafetida powder ( 'hing' )
2 medium green chilies , washed and chopped
2 medium fresh tomatoes , washed, peeled and chopped
water , divided
2/3 cup tamarind pulp
1/2 teaspoon red chili powder
2 teaspoons turmeric powder
1/2 tsp garam masala
salt as per taste
Method:
1Wash the dal and soak it for 2 hours in water.Pressure cook the lentils (toor dal) in a pressure cooker along with 3 cups of water until the lentils are tender.
2 Wash the tomatoes and cut them into big pieces. Break the stems of the green chilli, peel the ginger and wash it. Now put all the three ingredients into a mixer and make a paste. Cut the remaining ginger into thin slices.
3.Heat oil in a pot on medium-high flame.Once its hot, add asafoetida,mustard seeds, methi seeds and cumin seeds.
4.When they splutter and crackle.add in the curry leaves and ginger,onion.Stir-fry for 5 minutes until the raw smell of ginger is gone.
5.Now add turmeric powder, coriander powder, tomato paste and sliced ginger into it. Roast the masala well till the time oil starts to float at the top of it.
6 Add cooked mashed dal ,salt, red chilli powder and water as per the requirement
7.Extract tamarind pulp from tamarind mix well and allow it to cook on medium-high flame for 5 minutes.Allow this to come to a boil.
8.Put garam masala and coriander leaves in the dal. Your Dal is ready ,serve immediately with cooked long-grain white Basmati rice ,sindhi pakwan (cripsy puri made with maida) papad & mango pickle with yoghurt & matar batata bhaji
