I had seen this recipe a month ago in lajjatdar a marathi cookery show .Today being friday & our nonveg day was wondering what to cook.This recipe came to my mind as I had bunches of spinach lying in the fridge.This is a very simple ,fast and easy to cook dish. It goes well with chapathi, roti and naan & rice .
Ingredients
3 eggs hard boiled
1 small onion chopped
½ tbsp garlic paste
½ tbsp ginger paste
1 tsp red chilli powder
1 tsp coriander (dhana) powder
1 tsp hyderabadi garam masala
1 tsp lime juice / tamarind extract
As per taste salt
3 tbsp Oil
Paste 1
1 Big tomato
1 small onion
1 inch ginger
4-5 garlic cloves
Paste 2
A big bunch of Spinach leaves cleaned
1/2 bunch coriander leaves
4-5 green chillies
Garnishing
2 to 3 tbsp chopped coriander leaves / chopped spring onion greens
Method
1.Hard boil eggs cool & peel eggs & keep aside.
2.Saute the spinach leaves in 1 tsp of oil for 5 minutes / till leaves wilt. Once cooked, drain the excess water and grind it along with coriander & green chilli into a fine paste.
3.Next grind ingredients above in paste one to make tomato onion paste.
4.Then heat oil in a pan, add garlic ginger paste and sauté for some time.Add chopped onion & fry till it is browned. Then add red chilli powder, coriander (dhana) powder,turmeric powder,hyderabadi garam masala ,salt & fry for 2 minutes. Next add the onion-tomato paste prepared in step 3. Mix well and cook for five minute till oil starts separating.
5.Next add spinach coriander paste in step 2 & mix well add salt. Then add ½ cup of water depending on consistency of curry you require and bring to a boil. Cut the eggs into half and add to the gravy. Stir well and allow it to cook for a few minutes.
6 Garnish with coriander leaves / spring onion and serve hot with rice /chapathi.
