Kolhapuri Anda tambda Rassa |spicy andya cha kalwan- baida curry



I normally make skp style  andyacha kalwan inspired by mom,or eggs in green gravy or rgg korma hyderabadi style,Last weekend tried Kolhapuri Aanda Rassa /which was not only spicy but also delicious & fiery.i hope u all must be aware of kolhapuri misal pav.Spicy and hot Rassa (curry) depicts the character of vibrant Kolhapur as well. I collected this recipe from  my mausi.

Ingredients:
3 eggs, hard-boiled
2 Medium Tomatoes chopped
half onion chopped
2 tsp tamarind extract
3 Tablespoon oil
½ Teaspoon turmeric
Salt to taste
1 tsp ginger garlic paste

Onion coconut masala (kanda khobra vatan)
3 cloves (lavang)
5 peppercorns(kali miri)
1 inch cinamom (dalchini)
1 tsp fennel seeds (badishep)
4-6 dry red chillies
1 tsp poppy seeds (Khaskhas)
1 tsp fennel seeds (saunf)
1& half Large Onion chopped
1 Cup fresh grated Coconut / dry coconut ( you can use 1:1 ratio of coconut  & dry coconut)
1 inch crushed Ginger
3-4 crushed Garlic
1 Tablespoon oil

Garnishing
2 Tablespoon chopped coriander

METHOD:
1.Boil eggs .prick eggs with fork.Peel the boiled eggs, cut them into halves.
2.Heat half of the oil in a pan .Add cloves, peppercorns,cinamom,badishep  chillies, poppy seeds and fennel seeds .Saute till the spices start crackle aromatic & lightly brown .(be careful not to burn it)
3.Add the chopped Onion and mix  well.Now add crushed Ginger and Garlic and mix well.Cook well till its browned.
4. Add the grated Coconut and fry till it turns light brown.
5.Add the Tomatoes and continue frying for 3-4 minutes.

6.Remove from heat and cool this mixture add in n a blender and grind into a fine paste .Add some water from time to time to make this paste smooth.

7.Heat the remaining oil in a Kadai/Wok.add  ginger galic paste ,red chilli powder,saute for min.Pour in the kanda khobra  paste in step 6 and cook for a minute
8.Add little salt and turmeric, add water,tamarind extract to make the right consistency.Bring to a boil and simmer for 10 minutes.
9.Add the eggs in to the curry.Simmer for 5 minutes.adjust salt
10.Garnish with chopped coriander and serve hot with Chapati ,jowar bhakri or Phulka or Jeera Rice with chopped onions & salad.
