Beetroot Pulao - Rice - Khichdi

Yet another interesting ,colourful & a pulao with a  healthy tag.Yes I am talking about beetroot pulao. I am sure many of us including me do not like to eat raw beetroot daily .Hence this recipe will not only ensure that you consume beetroot but at the same time will give a tasty pulao to your tastebuds.
 
A couple of days I had seen this on one of the marathi cookery show .Couple of beetroots were lazily lying in my fridge since weeks & I was constantly pestered by husband to consume them.Beetroot pulao was defintely a clever & tempting way of finishing them off .Other option is beetroot halwa.but I prefered to make pulao which is pinkish red colour . The subtle taste of saunf ,spiciness of spices& sweetness of beets makes this rice so yummy





Ingredients :
Rice, - 2 cups
 Beetroot - 1 big
 Onion - 1 medium
 Tomato - 2 small
 Green Chilies - 2 medium
 Mint Leaves - handful
1 tsp ginger garlic paste
 Red Chili powder - 1 tsp
 Salt to taste
 Butter/ghee- 2 tsp
 Garam Masala - 2 pinches ( i had used hyderabadi garam masala )
 Cashew nuts - few
Whole Spices
Star anise (badian phool /chakri phool) -1
Bay Leaf (tej patta) - 2 small
Cloves(lavang) - 3
Cinnamon(dalchini) - 2"
Cardamon (elaichi) - 2
Fennel seeds -  1 tsp

 



Method
1.Wash and soak rice for 15  - 20 mins. Pressure cook with 3 cups or less water (Water depends on your rice ). Once the pressure falls, remove and add 1 tsp of butter and cover it again and keep aside.

 
2.Wash and peel the beetroot outer skin.  Grate or pulse it couple of times. Keep it aside.Fry cashew & keep aside
3.Heat a non stick pan with butter/ghee, add all the wholes spices, saute, then add onion juliennes, chopped green chilies, simmer or cook on high for couple mins, till the onions starts browning.
 
4.Then add chopped tomatoes, mint leaves, add salt, red chili powder and simmer till tomatoes turn soft. Once the tomatoes turn to paste, add the grated beetroot. Mix well.\
 
5.Cover with lid and simmer for 2 mins.

6.Now add the cooked rice and mix everything well. Simmer for couple minutes and serve with Onion Raitha.
