Oats porridge recipe |Oats nuts and fruits kheer


I am not a fan of oats sweet recipes.but mom had got this packet when she had visited me last timewhich was lying in fridge & so thought of making this healthy oats & dry fruits porridge as saturday breakfast. my hubby liked it very much.give it a try. 


 

 
 
 
Ingredients:
 
Quick Cooking Oats (I had used quaker oats strawberry & apple  flavour ) -1/2cup
water - 1/2 cup
Milk - 2cups
elaichi powder - 1 tsp optional
 Sugar-3/4 cup
Ghee-1 tsp

Garnish
pomegranate - few pieces
chikoo pieces - few pieces
roasted almonds & cashew - 1 tbsp

Method:
 
1.Dry roast oats for a minute and transfer to a plate.
2.Heat ghee in a pan add roasted oats & saute for 1 minute .next add water & let oats cook for 2 minutes
3.Add milk and bring it to boil.
5.Add sugar and let it boil till the consistency you want .i had kept consistency like thick kheer.
5.Place  the mixture in serving bowls and allow it to cool completely.
6. garnish with pieces of  almonds ,cashew ,chickoo & pomegranate.
7.Serve hot or cool.
 


Tips:
  • Add fruit pieces only once pudding is cool or else milk can get spoiled
  • choose any fruits of your choice
  • Oats should be served as soon as it is prepared
  • replace sugar with honey

Red bell pepper chutney








I made this vibrant lovely dark red chutney along with adai dosa  last weekend .Chutney with red bell pepper is quite tasty. Red bell pepper is chopped and cooked in the oil along with red chiles and garlic. Then all the ingredients are ground into smooth paste for the chutney. Finally the red bell pepper chutney is tempered with spices. It goes quite well with dosa.
 

Health Benefits of red bell Peppers

All peppers are rich in vitamins A, C, and K, but red peppers are simply bursting with them. Antioxidant vitamins A and C help to prevent cell damage, cancer, and diseases related to aging, and they support immune function. They also reduce inflammation like that found in arthritis and asthma. Vitamin K promotes proper blood clotting, strengthens bones, and helps protect cells from oxidative damage.



Red peppers are a good source of the carotenoid called lycopene, which is earning a reputation for helping to prevent prostate cancer as well as cancer of the bladder, cervix, and pancreas. Beta-cryptoxanthin, another carotenoid in red peppers, is holding promise for helping to prevent lung cancer related to smoking and secondhand smoke.
Besides being rich in phytochemicals, peppers provide a decent amount of fiber.

Ingredients:
Red Bell Pepper 1
Tomato - half chopped
 Garlic 3 Cloves
 Tamarind 1 inch Sized Ball
 Whole Red Chiles 2 – 4
 Oil 1 tsp
 Salt to taste
Urad Dal 1/4 tsp

Dahalya ( one we use in chivda) - 1/2 tsp
 Tadka - tempering
Mustard Seeds 1/4 tsp
 Asafoetida a pinch
 Curry Leaves 4
 Oil 1 tsp
 





Method :

1.Wash, remove ends, discard seeds and chop bell pepper into small chunks.

2. Soak tamarind in few tbsps of water and extract all the juice.

3.Heat oil in a pan, add  urad dal and  fry till it becomes light brown .next add red chiles and garlic.










4 Then stir in red bell pepper,tomato  tamarind juice and salt.Cook covered for few minutes till bell pepper turns little brown.be careful  not to overcook& burn  the bell pepper.

 

 5.Remove from heat and cool to room temperature.Grind the cooled ingredients into fine paste using a blender.

6.Heat oil in a pan, add all seasoning ingredients and add this to above chutney bowl.


7. Serve red bell pepper chutney with adai dosa /plain crispy dosa or with rice.




 Variations:

You can use  onion and tomato  along with Red Bell Pepper .

Adai recipe |Adai dosa | Multigrain lentil crepes



I wanted to make this dish since several months but somehow ended up in making normal dosa  or masala dosa . Last weekend i had determined to make adai .

Adai is a type of south dosa made of lentils and rice. It is usually prepared for breakfast and is filling and healthier than dosa.

 Best part is you need not ferment batter .you can make adai dosas immediately after grinding.You can add a handful of spinach or methi leaves to increase the nutritional value. This does not need much planning as for dosa.

It is protein packed  fulfilling breakfast/dinner.Serve adai with coconut chutney
But i had served it with red bell pepper chutney .
My husband liked this combo very much & we ended up having just masale bhat in lunch.



ADAI WITH RED BELL PEPPER CHUTNEY












Ingredients (makes 10-12 adais)
Raw Rice -  2 cup
 Urad Dal - 1/2 cup
Toor Dal (pigeon peas)- 1/4 cup
Channa Dal - 1/4 cup
Moong Dal - 1/4 cup
masoor orange dal - 1/4 cup
Red Chillies - 5
Turmeric powder -  pinch
Fennel seeds - 2 tsp

To be added in grinded batter
Hing - a generous pinch
green chillies chopped - 2
Big Onion - 2 medium  finely chopped
10-12 curry leaves
Garlic / ginger -  2 tbsp finely chopped
Coriander leaves- 2 tbsp finely chopped
Salt  - to taste
Oil - 1 tsp
 
Method:

1.Soak the rice and dals for atleast 2-3 hours, Keep aside. Grind it together with red chillies and fennel seeds to a coarse paste. Add salt, turmeric powder, hing mix well and set aside.








2.next mix onion, garlic/ginger ,curry leaves and coriander leaves and mix well.  Add  water to make it to  a running consistency slightly thicker than the dosa batter.




3.Heat the dosa tawa , take one laddle full and spread the batter as we do for dosa.



4 sprinkle little oil around egdes  and once it  gets brown,flip dosa  to other side and cook till golden brown.





5. Serve hot with coconut chutney, red bell pepper chutney.

Fruit chaat recipe | delhi street fruit chat recipe



Fruit chaat -  An ideal option for calorie conscious people. A  smart way in which a smart mom can ensure that her kids eat variety of seasonal fruits that too without any fuss .
You can even have it during fast (vrat or upwas) be it navratri or ramadan. If making for fasting replace normal salt with black salt (sendha namak).



It  is sold in the street corners of Delhi. Fruit chaat, as the name suggests, is a blend of assorted fruits  tossed with potatoes and a delectable blend of chutneys. Any combination of fruits can be used according to the seasonal availability and personal preferences. This chaat is packed with nutrients and is also low in calories.




I had made it using banana ,chickoo ,pomegranate ,apple &,cucumber , amla (indian gooseberry), mausambi .But you can make it with any fruits of your choice which are available in your home.You can even add boiled potato & boiled sweet potato or boiled chole  in the chat .If oranges are not  in the season then ready made orange juice is added.

Difference between fruit salad & fruit chat is that former is sweet in taste but later is a bit spicy & tang.



Ingredients:

1 banana, peeled & chopped
1/2 cup pomegranate 
1 large apple, cubed
1/2 sweet lime (mausambi) - peeled into segments
1 medium boiled potato
Half cucumber cubed
1 Chickoo
1 amla (indian gooseberry)


Seasoning
1 tsp lemon juice
1 tsp chaat masala
1 tsp roasted cumin powder
1 tsp pepper powder
1 tsp chili powder
1 tsp sugar
1/2 black salt or more as required or normal salt


Method:

1. Peel the fruits and cut them into cubes & place them in a bowl .

2. Mix in all the remaining ingredients of the seasoning in another bowl  .

3. Refrigerate both fruits & seasoning.

4 At time of serving mix seasoning with fruits.

5.Garnish with some mint leaves & serve cold .

Onion Uttapam | Onion Utthapa recipe

Onion Uttapam is one such recipe which I must have made n number of times but somehow forgot to post on blog.

This recipe is a must try recipe on day 2 or day 3 of leftover dosa batter. With dosa batter in hand making uttapam is a 10 minutes job.

Now coming back to Uttapam ,It is one of the  tasty South Indian snack or breakfast.  It has various types like vegetable uttapam ,plain,tomato ,tomato onion,plain onion, but Onion-Green Chili is one of my all time favorite. Uthappa deserves to be called the indian pizza as it lends itself to several toppings.Traditionally uttapam is made with lightly sour dosa batter.

I have been loving this since my job days mom used to give me in tiffin.

I did manage to make it even when mom was not at home but the difference was I made it with readymade dosa batter & now I make it with home made dosa batter.

Ingredients

 Dosa Batter – 2 cups { Check above for recipe of dosa batter}
 Onions sliced finely – 1 cup finely chopped
 Green Chilies - 3-4 chopped
 Cilantro -1/3 cup chopped
 Cooking oil /ghee for shallow frying
 Salt as per taste

Method:


 1.Mix litte salt with onions & chillies.keep aside .




2. Heat griddle or tawa. Take one ladle of dosa batter and pour in the middle of the griddle.

 3.Spread the batter as pancake (spread it thicker than dosa as shown in picture) and add one teaspoon of oil along the edges.



4. Next spread chopped onions, green chillies and chopped cilantro evenly.



5.Let it cook on the medium flame for a minute and then  cover the uttapam with a lid. Cook for another 2 minutes.
 

6.Remove the lid and add few drops of oil on top of onion and chillies.By this time the uttapa would have browned at the base .


 7. Gently flip the uttapam to the other side and cook for couple of minutes.Uttapam is ready when it is golden brown in color. Now smear ghee /butter on top of it.



 8.  Serve hot with  green/red coconut chutney and sambhar.

Aloo Tuk Recipe | Sindhi Double fried potato chips

Aloo Tuk is a sindhi dish in which potato  is  fried twice  ie  fried till it is very crispy and then sprinkled with spices.It can be served as a snack or a side dish  with dal  combo or curry rice combo.

But yesterday I decided to go for a sindhi meal & served aloo tul with sindhi bhughe chawal.The recipe source is sindhirasoi.com.I made some modification to it by adding turmeric and cumin seeds powder& chat masala.This dish is easy to prepare.


I remember having Aloo Tuk for the first time in a colleagues tiffin in office .since than i always wanted to make this at home .


Normally I make batatyche kaap (marathi style potato chips).I just love potatoes  since my childhood can eat them in any form.So this recipe is definetely liked by me .
 

here goes  the aloo tuk recipe….






Ingredients :

2-3 potatoes (aloo /batata)

Spices

1/4 tsp turmeric/haldi powder
1/2 tsp red chilly powder (add as per your taste)
1/2 tsp coriander powder
1/2 tsp cumin seeds powder (optional)
1/2 tsp amchur powder(dry mango powder)
Normal salt or rock salt or black salt (as per taste)
Oil for frying potatoes

Method :


 1.Peel the skin of the potatoes. Wash the potatoes in water .

 2.Next cut the potatoes in slightly thick rounds .keep them in a bowl of water for 5-10 minues.next wipe them dry with a napkin or towel.



 

 3.Now rub some salt on  the chopped potatoes. Toss them well and deep fry them in hot oil, till they are slightly cooked and tender.


 4.Remove them from oil. Slightly press  them with a the back of a ladle or spoon.(be careful not to press hard or it will get smashed).












 5.Now again fry them in hot oil till they are crisp and golden brown.Mix all the spice powders mentioned above  in a bowl.



 6.Remove them on a clean tissue paper so that the extra oil get soaked.


 7.Mix all the spice powders mentioned above with the aloo tuk. Mix well. You can increase or decrease the quantity of the spice powders as per your taste.


 8.Serve hot with tomato sauce or with bhughe chawal.




Tip :

On vrat /upwas /fasting days use  rock salt/sendha namak instead of normal salt

BALASAHEB THACKERAY | shradhanjali to hindu hriday samrat


17th November 2011 was a black day in the life of  maharashtrians ( including me ) &  indian history as  the news of demise of shri balasaheb thackeray  was a bolt from the blue . my mind was not ready to accept this fact.

I had been praying since I had heard the news of his illness on 14th november .The news was unbelievable for many of us that shivsena pramukh is no more with us.His death has left a big void which cant be filled easily as there cant be a leader like him.

I have  always been in awe of balasaheb since childhood.I deeply respect & have a feeling of pride for shiv sena supremo.Watching the news of respected Shri Balasaheb Thackeray’s demise on television, tears flowed from eyes as I was struck by several emotions.
It was as if i had lost my grandfather.

He was a cartoonist, patriot ,a great eloquent orator with charismatic personality,had the guts to call a spade a  spade, a mass leader , crowd puller who had won the hearts of many people & had become their "saheb in true sense"He formed the Shiv-Sena in 1966 and since then has risen to power as the most powerful polarizing man in Maharashtra and one of the most influential person in Indian politics. Full of life, Balasaheb Thackeray was an epitome of courage & valour.




Balasaheb Keshav Thackeray ( 23 January 1926 – 17 November 2012) was an Indian politician, founder and chief of the Shiv Sena, a right-wing Hindu nationalist, and Marathi ethnocentric party active mainly in the western Indian state of Maharashtra.




His followers called him the Hindu Hriday Samraat ("Emperor of Hindu Hearts").He made way for the Marathi Manoos to display it's rights and power over it's mother land of Maharashtra. Peace be upon the soul of a man admired for his motivating speeches and love for his land.

Undoubtedly balasahebs  name will be etched in golden words in the history for supporting the marathi manoos & hindutva
