You can’t do better than beets and carrots for sweet, earthy winter nourishment, and this zesty recipe combines them with ginger and a touch of orange rind to make an intriguing soup that will surprise and delight your whole family.
What a tasty way to get your beta-carotenes and minerals: this is soup is ginger twist,with sweetness from carrot and beet & spice from ginger.this is very nutritious soup since beetroot helps increase the haemoglobin content, carrot adds to vitamin A

Ingredients
2 medium beets
1 tablespoon oil +1 tbsp butter
1 small chopped onion
2 carrots, coarsely chopped
1 tablespoon minced fresh ginger
1 large garlic clove, minced
4 cups water or vegetable stock
1 teaspoon lemon juice
3/4 teaspoon salt
Freshly-ground black pepper to taste
Method:
1. Under running water wash beet and carrot thoroughly , peel them with a vegetable peeler. With a chef’s knife, cut the beets into chunks.
2. In a sauce pan over medium heat the oil. Saute the onion until it is translucent. Add the carrots, ginger, and garlic. Cook for 5 minutes, stirring frequently.
3.Add beet roots and water .now cover with a lid and simmer for 20 minutes or until the beets and carrots are tender.Another method after sauteing veggies you can pressure cook them for 1 whistle with ginger garlic & allow to cool.
3.Once cooled drain water (don't throw water in which veggies are cooked we will use it later) in which veggies were cooked & puree them in a mixer or blender
4. Now transfer the pureed soup to a large vessel ,add the water reserved at the time of pressure cooking the beetroot and carrot and stir in the salt and pepper.see tip 4
5.Taste the soup, and adjust the seasonings, if you like. switch off gas and add lime juice & butter and mix well .
6.Serve the soup hot or chilled, garnished with dollops of sour cream.
Tips:
1) add butter just before serving
2) you can top the soup with fried noodles if you like them
3)do not throw away the water used for pressure cooking beetroot and carrot add it to the soup since it contains certain nutrients
4) can add coriander cumin powder & a dash of cinnamon powder if you want to spice it up.
