PLAIN TOMATO SOUP HOTEL STYLE

TOMATO SOUP ( HOTEL STYLE)
I tried soups in different manners but this one was near to the hotel style tomato soup.




Ingredients:

 1/2 kg ripe red tomatoes
1 green chili, slit into half
1.5'' ginger, chopped

2-3 garlic cloves
4-5 pepper corns
1-2 cloves
1/2 inch cinammom stick
1 1/2 tsp. sugar
Butter as required
Salt to taste
1 tsp. corn flour, dissolved in water
Bread croutons




 Method:
 
1.Slit each tomato into 4 parts. Pressure cook [3 whistles] tomatoes, chili & ginger,garlic,pepper,cinamom,cloves ,bayleafwithout adding any water. Remove & cool.

2.Next remove the spices (except pepper)cinamom,cloves ,bayleaf & allow the above mixture to cool .

3.Blend it in a mixer & strain the puree. Keep the puree on medium gas mark.

4.Add pinch of salt, sugar & a tsp of butter & water if required to adjust consistency. Let it boil for 5 min.

5. Then add corn flour & stir till it boils & thickens.Sprinkle with pepper powder.

6.Serve hot with a blob of butter & bread croutons.

Tip:
Add a small piece of beetroot while cooking tomatoes in cooker this will give a rich colour to soup
