Ever wonder how red pepper/red chilli flakes are made? Red Chilli Flakes Also Known as Paprika.
The rich coloring of paprika not only enhances the visual appeal of foods, but it can also be used as a major flavoring. It goes well with just about any savory food, including vegetable curries, stews, creamy sauces, pastas, pizza, in tomato dishes and salads.
For most recipes, the paprika is added near the end of the cooking process, because heat diminishes both the color and flavor.
MAKING THEM AT HOME IS QUITE ECONOMICAL AND EASY TOO
Ingredients
Red dried chillies (lal suki mirchi) - (I had used half guntur chilli and haf byadgi)
Method:
1.Break the stem from the red chillies
2. heat a tava .dry roast them in tava until crisp.keep stirring taking care they shouldnot burn
3.Switch off the flame and let them cool completely.
4.Pulse the roasted chillies into a mixie / food processor and pulse a couple of times.(do not run mixer fast for long time as you will get red chilli powder and not flakes.
so just on mixer after few seconds switch it off repeat this couple of times
5. Store in a airtight container.
