Hotel style palak soup -shorba | Cream of spinach soup


Soups are very good appetizers and are especially liked during winter and rainy seasons. Palak (Spinach) is a green leafy vegetable rich in iron, calcium, vitamin A, E, K, B6, folic acid and dietary fiber.This soup is very light, easy to prepare and liked by all age groups.




Ingredients:

Palak (spinach) - 1 big bunch
Milk - 1/4 cup  or 1/4 cup heavy cream
Onion - 1 small finely chopped
Garlic - 2-3 cloves
Ginger - 1 inch
Green chili - 1 slit
Black pepper powder - 1/4 tea spoon
Cinamom (dalchini powder)-1/4 tsp or 1 inch cinamom stick
Corn flour - 1 teaspoon (OPTIONAL)
Sugar - 1 teaspoon
Butter - 1 teaspoon
Salt to taste


Garnishing
Fried maggie noodles (optional)


Method:


1.Wash spinach and  remove stems .
2.Heat 1 tea spn butter. When it melts, add spinach and fry for 1-2mins.Add garlic & green chilli . Cook till spinach leaves become tender. Grind them into a smooth puree using mixer/blender.
3. Heat remaining butter,add cinamom stick  and fry onions till they turn translucent.
4.Now add spinach puree. Mix  in milk or water,add pinch of cinamom powder,sugar salt and add this to the spinach mixture stirring continuously on a low heat
5.When it thickens to desired consistency, take off from heat.
6.Sprinkle little pepper powder .Garnish with fried maggie noodles.
6.Serve hot.


Tips:

1 For thick consistency add 1 tsp of cornflour in 2 tsp of water or milk & add in step 4.
2. Instead of milk you can use heavy cream .Add it in mixer while preparing spinach puree & proceed from step 3.
3.The colour of soup will depend on the amount of milk you add if you want green looking soup reduce the amount of milk.
