Cabbage apple walnut salad


Friends do u like cabbage sabzi  ? If your ur answer is no - Then we both are sailing in the  same boat .So I always try to consume cabbage in some other form like cabbage pakoda , cabbage paratha or cabbage  apple walnut salad  which is our todays recipe .





Health benefit
In this simple, easy-to-make, elegant salad, the traditional calorie-laden mayonnaise dressing is replaced with a healthier version, made using olive oil .

Cabbage is a good source of vitamin C, while apples provide fibre, placing this salad high on the nutrition scale.

Walnuts not only taste great but are a rich source of heart-healthy monounsaturated fats and an excellent source of those hard to find omega-3 fatty acids,good source of
 vitamin E


Ingredients:

2 cups shredded white /green / purple  cabbage (kobi/patta gobi)
3/4 th cup apple cubes ( seb/safarchand)
1/4 cup finely chopped green onion
1 tsp roasted walnuts (akhrod) / almonds


Dressing
2 tablespoons olive oil
 1 tablespoon lemon juice / vinegar
1 tsp dry red chilli flakes (paprika)
1 tsp sugar
1/4 tsp crushed pepper /peper powder
1/2 tsp soya sauce
1 tsp finely chopped cilantro ( coriander )
salt to taste



Method:

1.Tear off and discard the tough outer leaves of the cabbage. Cut it in half and cut out its core. shred cababge into thin slices.
2.Toast the walnuts in the pan  for 5 minutes take care not to burn. While they are still warm, first rub them in a clean dish towel to remove some of the skins, then chop or coarsely crumble them.
3To prepare the dressing, mix the vinegar/ lemon juice, oil,some salt, red chilli flakes (paprika) ,crushed pepper /peper , soya sauce.
 4.Quarter, peel, and core the apples. Slice the quarters lengthwise fairly thin and cut these slices lengthwise into a julienne.

5.Add cabbage, apples, and walnuts ,onion , coriander & refrigerate till use.
6.Just before serving, add the dressing to the salad and toss well.
 7.Let the salad sit for 5 minutes, taste again, adjust the seasoning as needed, and serve immediately.


Variation:

1. Add 1 tsp of roasted peanuts & 1 tsp roasted sesame seed s (til) instead of walnuts /almonds .

2. Cut apple prior to serving salad or else will turn brown.

3. Add 1/2 tsp grated ginger / 1/2 tsp chopped garlic to above salad.

4. Use fresh & crisp cabbage & apple.
