Andhra style chicken pulao recipe



Many recipes lying in my laptop ,one such is andhra style chicken pulao.I have followed exact recipe from vah re vah chef sanjay thummas site.




Andhra chicken pulao is a traditional and classic Andhra dish. 
It’s a pleasant rice based delicacy which has its own unique and distinctive flavors. Normally the Andhra dishes are spicy and flavorful.
 This dish is popularly known as the Kodi pulao which means chicken pulao.






Ingredients

Basmati Rice       1.5 cups
Onion                2 large (sliced)
Green chili        5 or 6 no. (slit open)
Ginger Garlic paste      1 tbsp
Curry leaves      1 sprig
Coriander Powder         2 tsp
Turmeric powder         1/4 tsp
Salt         to taste
Mint & Cilantro/coriander leaves         handful each
Oil                2-3 tbsp
Shahi Jeera/Black Cumin seeds       1/4 tsp
Cumin seeds       1/4 tsp
Cardamom              3 no.
Cinnamon          1" stick
clove  4 

Chicken marination:

Chicken           300 grams(i used boneless, skinless chicken breast)
Yogurt             1/4 cup
Curry leaves     1 sprig
Chili Powder      1/2 tsp
Turmeric Powder     a pinch
Fennel seeds 1 tbsp
Mint & Cilantro     1 tsp(finely chopped)


Dry Roast & Grind
Poppy Seeds       1 and 1/2 tbsp
Cinnamon          2" stick
Clove          3 or 4 no.
Coconut          1/4 cup (shredded)



Method
1. First wash and drain chicken, then add chicken to a bowl, then add other ingredients under the heading "Chicken marination" and mix well and cover with cling wrap and rest for 20-25 minutes.
Meanwhile wash and soak basmati rice, 

2. Heat a pan,dry roast poppy seeds, cinnamon, clove for few minutes then grind it to a smooth paste along with coconut and keep aside.
3.Now heat oil on a large skillet, add the tempering ingredients then add sliced onions and saute for a minute and add ginger garlic paste, pinch of turmeric powder and saute till the raw smell leaves.

4.Then add green chili, curry leaves and stir fry for few seconds and now add the ground coconut paste and stir fry for 1-2 minutes.And add coriander powder and stir fry for another minute and add marinated chicken and stir fry for 1-2 minutes.
5.Then cover the chicken with lid and cook till chicken gets cooked and tender.

6.After that add soaked and drained rice,chopped cilantro n mint leaves and stir fry for 1-2 minutes and add enough water and salt and cook till the rice done.
7.Lastly add some finely chopped cilantro, fluff the rice and serve hot with raita.
