Upwas varicha cutlet |Vari Tandul pattice|Fasting sama potato tikki


Posting a fasting recipe after a long time, vari tandul pattice. 




Samo rice is known as Vari Tandul, Bhagar or Kodri in Marathi .
It is the seed of a grass  ( Echinochloa Colonum) which frequently grows amongst the rice paddy as it requires damp, or even waterlogged, soil. Instead of removing it with weedkiller, farmers harvest it. When cooked, it makes a tasty and filling meal. . In the west it is called 'Samo' or 'jungle rice'.

You can even use ready made varicha peeth (flour) which is easily available in mumbai & maharashtra

Ingredients :

Sama/Maraiyo/Mordhan/Vari che tandul -1 cup
Potatoes/aloo ,boiled - 2 (medium size){about 3/4 cup}
Green chilies,chopped-1.5 tsp 
Ginger/adrak, chopped- 1 tsp (skip in case you dont eat ginger during fasting) 
Fresh coriander/dhaniya,chopped- 3 tbsp
Cumin seeds/jeera- 1 tsp
Mango powder/amchoor - 1.5 tsp
shengdana koot - 1/4 cup
Salt/namak -to taste
Cooking oil/Ghee- 3 tbsp 

Method :

1. Dry roast varai grains ,let it cool & grind to fine powder.

2.Mix together grated potato,sama and all the ingredients and mash well.

3.Grease your palms and make patties/cutlet of same size from the mixture.



4.Heat oil/ghee in a flat nonstick pan and shallow fry the patties on medium flame till  they become golden and crisp from both the sides.(avoid deep frying)



5.Drain on a paper napkin and serve hot with upwas coconut chutney or dahi peanut chutney


Tips :

1 You can even use readymade vari cha peeth instead of vari grains for making cutlet.

2. Can add red chili powder instaed of green chilli paste

3. Can replace amchoor powder with equal amount of lemion juice or dahi (curd)
