Corn Salsa Rice |Tomato corn bell pepper salsa mexican rice


last weekend  had got yellow  red & green bell peppers from total mall .Had a corn cob lying in fridge .Couldn't stop myself from making this rice when i had seen it on maayeka blog .made few changes to suit our taste .Before detailed recipe let me tell you about this recipe in which is a mexican dish.

In this corn salsa is mixed along with rice resulting in an aromatic rice dish .

Now whats salsa ?





 
Salsa is the Spanish term for sauce, and in English-speaking countries usually refers to the often tomato-based, hot sauces typical of Mexican cuisine, particularly those used as dips. salsa is a spicy sauce of chopped, usually uncooked vegetables or fruit, especially tomatoes, onions, and chili peppers, used as a condiment.

The word salsa entered the English language from the Spanish salsa ("sauce"), which itself derives from the Latin salsa ("salty"), from sal ("salt")

Corn salsa is a chunky salsa made with sweetcorn and other ingredients, such as onions, and chiles (either poblano, bell peppers, and/or jalapenos), made popular by the burrito chains for burritos, tacos, and quesadillas.




 INGREDIENTS-
 Raw Rice-1 cup
Chopped garlic - 1 tbsp
 Yellow bell pepper cubed - 1
Red bell peppers cubed -1
Green bell pepper,chopped-1
 Tomato,chopped -1 cup
 Green chilies,chopped-2
Corn kernels,boiled-1 cup
 Chili sauce-1 tbsp
Grated cheese- 2 tbsp
 Red Chili flakes- 2 tsp
Oregano-1 tsp
 pepper powder - 1 tsp
lemon juice /vinegar - 2 tsp
 Basil- 1/2 tsp
 Salt-to taste
Oil- 1/4 cup

Method:

 1.Wash and soak rice in water for half hour.next cook rice with 1 and half cup & 1 tsp oil water till done

 

2.Place the cooked rice in a plate to cool down.

3.Heat oil in a wide pan ,when oil is hot then add chopped green chilies ,chopped garlic and stir .



 

4..Now add chopped tomatoes,chopped bell peppers(yellow,green and red) and salt.Cook on medium heat till tomatoes become soft.





5. Now add boiled corn,oregano,black pepper powder ,chili flakes,basil & red chili sauce .saute & mix well 


 

6.Lastly  add boiled rice, and mix gently.Cook for 2 minutes on medium heat


 

7. Switch off gas ,squeeze lemon juice & add  grated cheese.mix well.

8. Serve hot garnished with grated cheese
