Cheese chilli uttapam - italian pizza uttapam recipe



I am sure 99 percent of people like cheese just like me .I had tasted this uttapam in nandini cafee in hyderabad & thought of replicating it last weekend for breakfast .the result was simply superb .

I love to try out various  uttapam & this  uttapam was just another feather in the cap.

Making this uttapam is easy if you have dosa batter ready .Or else you can even prepare fresh dosa batter.Kids will surely like this recipe .You can top cheese with some veggies like capsicum,onions,corn & tomato while making for kids.


 

Ingredients:


Dosa Batter - 1 cup (Pls click here for dosa batter recipe)


Cheese cubes - 1 -2


Salt - to taste


50 gm cheddar cheese


Chilly flakes - 1/2 cup


Italian seasoning  or pepper powder (optional)









Method:

1.Grate cheese & keep it aside .


2.Heat griddle or tawa. Take one ladle of dosa batter and pour in the middle of the griddle.

 3.Spread the batter as pancake (spread it thicker than dosa as shown in

picture) and add one teaspoon of oil along the edges.







4.Add the grated cheese and chilly flakes,Italian seasoning  or pepper powder & now keep the flame medium.



.Let it cook on the medium flame for a minute and then  cover the uttapam with a lid. Cook for another 2 minutes.


6.Remove the lid and add few drops of oil on top of uttapam.By this time the uttapa would have browned at the base .

 7. Gently flip the uttapam to the other side and cook for couple of  minutes.Uttapam is ready when it is golden brown in color. Now smear ghee /butter on top of it.











8.Serve hot with coconut and tomato chutney or mayoneise.



Variation:

1.Top cheese with some veggies like capsicum,onions,corn & tomato while making for kids.

AWLA SARBAT -AMLA SHERBAT (SHARBAT)- INDIAN GOOSEBERRY JUICE

Husband had got plenty of awla stock from big bazaar & so my focus was on trying various dishes made from amla . so after trying amla chutney & amla pickle , amla candy ,  

amla supari next was avla sarbat .This awla sarbat is not only good in taste but for health too.

.Normally we get plenty of amla from october to january.

Ingredients:

10-15 Amla (awala -indian gooseberry) ( about 1 cup)
1 tsp grated ginger
1 tbsp lemon juice
1 1/2 cup sugar








Method:

1. Pressure cook amlas for 2 - 3 whistles. Allow it to cool.



 






2. Deseed the boiled amlas,cut it into small pieces .Now grind amla pieces with sugar and salt. Grinded paste or Squash should taste sugary. 







3. Transfer this to a glass or plastic bottle and refrigerate.

4. To prepare Amla sherbat mix 3 tbsp of squash/syrup with enough water and ice cube. Serve refreshing ,tasty healthy amla sharbat


Tips :

1 Add black salt or pepper powder or mint  leaves while serving

Tomato Onion Uttapam - uttapa


Tomato Onion Uttapam is one such recipe which I must have made n number of times but somehow forgot to post on blog.

This recipe is a must try recipe on day 2 or day 3 of leftover dosa

batter. With dosa batter in hand making uttapam is a 10 minutes job.

Now coming back to Uttapam ,It is one of the  tasty South Indian snack

or breakfast.  It has various types like vegetable uttapam ,plain,tomato ,tomato onion,plain onion, but Onion-Green Chili is one of my all time favorite. Uthappa deserves to be called the indian pizza as it lends itself  to several toppings.Traditionally uttapam is made with lightly sour dosa batter.

I have been loving this since my job days mom used to give me in tiffin.

I did manage to make it even when mom was not at home but the difference was I made it with readymade dosa batter & now I make it with home made dosa batter.

Ingredients

 Dosa Batter – 2 cups { Check above for recipe of dosa batter}
 Onions sliced finely – 1 cup finely chopped
Tomato chopped - 1 cup
 Green Chilies - 3-4 chopped
 Cilantro -1/3 cup chopped
 Cooking oil /ghee for shallow frying
 Salt as per taste






Method:

 1.Mix litte salt with onions,tomatoes  & chillies.keep aside .




2. Heat griddle or tawa. Take one ladle of dosa batter and pour in the middle of the griddle.

 3.Spread the batter as pancake (spread it thicker than dosa as shown in

picture) and add one teaspoon of oil along the edges.



 

4. Next spread chopped onions, tomatoes,green chillies and chopped cilantro evenly.



 

5.Let it cook on the medium flame for a minute and then  cover the uttapam with a lid. Cook for another 2 minutes.


6.Remove the lid and add few drops of oil on top of onion and chillies.By this time the uttapa would have browned at the base .

 7. Gently flip the uttapam to the other side and cook for couple of  minutes.Uttapam is ready when it is golden brown in color. Now smear
ghee /butter on top of it.




 8.  Serve hot with  green/red coconut chutney and sambhar.

Kala chana salad , Kala Chana Chat

Chickpeas are a helpful source of zinc, folate and protein. They are also very high in dietary fiber and hence a healthy source of carbohydrates for persons with insulin sensitivity or diabetes. Chickpeas are low in fat and most of this is polyunsaturated.

 The major well known varieties are white chickpeas also known as kabuli chana or garbanzo beans, brown or black chickpeas known as kala chana and green chickpeas also know as hara chana. 








INGREDIENTS

2 cups boiled brown chickpeas (kala chana)
1 boiled potato, cut into pieces
1 tomato deseeded & finely chopped
1 onion chopped finely
1 capsicum / cucumber chopped  (optional)
1 tsp lemon juice
1-2 finely chopped green chillies (Use as per your taste)
1 pinch red chilli powder
1 pinch pepper powder
1 pinch jeera (cumin) powder
1 tsp chaat masala
1 tbsp chopped coriander (dhania /kothmir/cilantro)
salt to taste




METHOD

1.Wash & soak chana overnight . (i had used sprouted black chane)


 

 2.Pressure cook till soft or tender salt .Take care not to overcook the chickpeas .

3.Add all the above ingredients and mix well.Garnish with coriander leaves,sprinkle some chaat masala and serve .



4.Chill thoroughly and serve. 


5.You can make this salad early and store it in the fridge.


6.Serve the chat with hollowed tomatoes or onion slices for great presentation.


TIP

1.You can even use sprouted chickpeas to prepare this salad which will increase the nutritional value further.
2. You can add a more tangy taste to above salad by adding 1-2 tsp of date tamarind chutney to above salad & then garnish it with yellow shev & coriander
