SOYABEAN SEEKH KABAB|KABAB WITHOUT MICROWAVE-STOVE TOP METHOD

PESHAWARI SOYABEAN SEEKH KABAB (WITHOUT MICROWAVE) is a simple yet delicious dish using healthy ingredient that is beneficial to health and made with soya bean, paneer, ginger, garlic, garam masala and other spices. This is completely a vegetarian dish and is egg free too.

Vegetarian kabab is delicious, golden crispy brown on the outside with a soft meaty texture on the inside; they taste and look like very appetizing and delectable. These kabab can be eaten on its own with yummy accompaniments like tomato sauce, mint chutney or sweet chutney. They can be served as starters or during any parties.

The vegetarian kababs are easy to prepare at home as they are shallow fried instead of grilled on the skewers.  The vegetarian kabab is high is protein, fiber and many other important vitamins as the main ingredients are Soya beans . Kababs on its own makes a great dish having unique taste. Kababs have a wide variety of meat and vegetarian dishes that originated from Persia and later on adopted by the Middle East and Turkey and now popular all over the world. In India, Kababs generally refers more specifically to shish kabab served on the skewer served wrapped in bread with a salad and a dressing.  Vegetarian can make kababs using tofu, paneer, falafel or mixed veggies.



 INGREDIENTS

11/2 cup soaked soya granules(I used nutrela brand)
1 cup grated paneer(cotage cheese)
4-5 green chillies
1 inch ginger
2- garlic pods
2-3 tbsp breadcrumbs
1 tspn red chilli powder
1 tspn chana masala/garam masala
1tsp dhania jeera powder (coriandercumin powder)
1 cup chopped coriander leaves
Salt as per taste

METHOD:
  1. Soak soya granules in boiling water for 10 minutes.Drain water completely by placing in a colander.Let it cool squeeze excess water from soya granules by pressing them witn fingers.
  2. Grind garlic,green chillies & garlic to paste.
  3. In a bowl add paneer,soya granules (step1),gingergarlic chilli paste,redchillli powder,salt,chanamasala ,coriander cumin powder & mix well with hands.
  4. Grind the above mixture in mixer.
5 Add chopped coriander leaves to above mixture.
6 Apply some oil /water to hands (so that mixture doesnt stick) & shape it horizontally in the form of elongated kababs as  seen below.
7 Next insert a  wooden churner (this is called ravi in marathi & is iused to smash dal) in the centre of kabab longitudinally & with help of fingers press the kabab on the wooden churnet so that a hollow portion is created in the centre of kabab as seen below.
8 Slowly remove the churner from the centre it will look as seen in the picture below.

9 Alternatively you can take a toothpick & press the mixture with your fingers on the toothpick to form a kabab as seen below.

10 Shallow fry the kababs in oil till golden brown.
11 Garnish with Cucumber, Corainder leaves and a slice of lemon.
12  Serve with mint chutney
