CORN BHAJIA-PAKODA|AMERICAN SWEET CORN BHAJJI-FRITTERS

Last week I had got lots of corn from farmers who sell  fresh vegetables.So this week was my corn week. Had already tried corn paneer matar pulao.My next to do recipe was corn pakoda/bhaji(fritter).Apart from being tasty it is a healthy snack.below are few health benefits of corn
 Corn is a low-fat complex carbohydrate that deserves a regular place on any healthy table. These high-fiber, fat-fighting kernels of goodness are also hearty and satisfying.Corn is a decent source of vitamin B1, B5, C, E, folic acid, magnesium and phosphorus. it is a good source of complex  carbohydrate, fiber, and healthful essential fatty acids. 



Ingredients:
1 cup corn  (american sweet corn / fresh corn kernels)
1 medium sized Onion – finely chopped
¾ cup besan
½ cup rice flour
1 tsp green chilli,ginger ,garlic paste
2 tsp red chili powder
1 tsp turmeric/haldi powder
2 tsp cumin coriander /dhania jeera powder
Water to make batter
Few Coriander leaves – finely chopped
Oil for frying
Salt as per taste

Method:

1.Grind corn coarsely in a mixer.(PASTE SHOULD BE COARSE NOT SMOOTH).

2.In a bowl mix together grinded corn, finely chopped onion, red chili powder, haldi, jeera dhania powder ,green chilli,ginger ,garlic paste.Let it marinate for  minutes.


3.Add finely chopped coriander.,besan,rice flour salt  to above mixture & mix well. Add little water (.The batter should not be too thin.) Also add 1 tsp of hot oil. Mix gently. 



4.Heat oil in fry pan. Make small bunches of the mixture and dip into hot oil for deep frying. 

5.Fry the pakodas till they become golden brown. Then drain on paper napkin. 




6 Serve hot with tomato ketchup or red chutney/green chutney.
