Phirni recipe | Dudhi Phirni |bottle gourd firni


Firni is part-and-parcel of festivities in northern india.

It is traditional rice custard made with rich, creamy milk and served in earthenware, which makes it all the more pleasing to the palate.

This is a delicious creamy  pudding. Phirni is made with rice, milk and sugar, and has wonderful creamy texture. Ingredients are the same as Rice Kheer but the taste is very different.


Phirni has many variations like kesar phirni,carrot phirni,Badam phirni,mango phirni strawberry phirni,apple phirni,etc

had seen this on amhi saare khavayye " a marathi cookery show"



Ingredients 

Dudhi/lauki /Bottle gourd – 1 cup grated (after grating squeeze out water)

Milk – 3 cups

Condensed milk – 2-3 tsp

Milk powder – 1 tbsp

rice - 1 small bowl(vati) immersed in water for 2 hours

Dry fruits – 2 tblsp

Cardamom powder – ½ tsp

Ghee/butter – 2 tbl.sp

Saffron soaked in milk + pista slices +roasted cashew  -garnish
 


 




















Method

1 soak rice in water for one hour and then grind it coarsely.

2. Peel the skin and grate bottle gourd(dudhi) .Heat ghee in a pan, and saute grated bottle gourd for 2 to 3 minutes till soft add 1 tsp sugar
 

3.In the deep pan /kadhai  add milk and leave it to boil. When it starts boiling,add sauted dudhi, rice coarse  paste and cook till the rice has become soft and tender.

4 Add condensed milk,  cardamom powder, milk powder and cook for 2 to 3 minutes.keep on stirring continuously.let it come to a boil.

5 now check sweetness and add sugar accordingly as condensed milk & milk powder is also sweet.


6.Once mixture thickens switch off gas .Remove from fire .



7.garnish with  pista slices  and saffron and serve chilled
