Chickpeas orange walnut lettuce cabbage salad


SUMMER may not be the best time to cook, but it’s certainly among the best times to eat.I do know its not summer season but this was one of the numerous summer season salads made by me which as lying in my drafts since months

Finally leaving my laziness i decided to post it .had tasted this in a restaurant in hyderabad since then hubby was pestering me to make this ,,,finally i made one







One of the most nutritious of all beans, chick peas (or garbanzo beans) are rich in iron, protein and folic acid.

Fresh fruit,dry fruits ,beans, tossed with salad greens and then dressed in a syrupy sweet tangy and spicy dressing is just irresistible!! this healthy combo is bound to add zing to your day!

 
Once you have tasted this salad, you'll be hooked.The ingredients used in this salad  enrich it , upgrading it to a dish fit for a festive lunch or dinner. i have tried many salad recipes from tarla dalal site

Healthy tip
  1. This dish is high in protein and B vitamins, including inositol and choline (important for the nervous system, growth of hair and for reducing bad cholesterol).
  2. It is also rich in phosphorus, iron, potassium, magnesium, zinc, copper, quercetin and calcium, folic acid, silicon, fibre and lutein
  3. This is an extremely refreshing and nutritious salad with valuable anti-cancer carotenoids such as vitamin C. I
  4.  Remember to use the pith of the oranges, since this is high in bioflavonoids, which is excellent for blood vessels.
  5. Another benefit is that substances in lettuce leaves induce sleep.

 

  
Ingredients

1. 5 cups boiled chickpeas /kabuli chana
1 cup  lettuce
1/2 -3/4  cup chopped toasted walnuts
1/2 cup  orange segments
1 cup shredded purple cabbage


Dressing
2 tablespoons Fresh lemon juice
1 tbsp olive oil
1 tbsp pepper
1 tsp vinegar
1 tablespoons Sugar
pinch Salt

 



METHOD

1.Boil chick peas in a pressure cooker till soft

2. Wash lettuce and section into leaves, discarding the tough outer ones. Drain; wrap in paper towels to dry. Store in refrigerator until needed
 
3.Peel oranges and remove all outside membranes, using a small serrated knife and employing a seesaw motion. Section the oranges by cutting away all the membranes from the orange flesh. As you work, lift out each section and place in a small mixing bowl.
 
Squeeze the juice from the remainder of the orange over the sections to keep them moist. Cover; keep chilled
4.Make a dressing by mixing the lemon juice, olive oil ,vinegar, pepper powder ,sugar, salt, . Blend well, then taste and adjust seasonings
5.In a mixing bowl add all ingredients of salad,  add dressing mix well and serve immediately





 




Variation:
 
  1. Prepare as above, using 3/4 cup chopped dates ,raisins, almonds in place of the chopped walnuts
  2. can use sprouts ,chopped onions,cherry tomatoes,radishes or colour bell pepper in salad
  3. Can add mint leaves,basil leaves,crushed garlic to dressing
