kesar shrikhand | saffron elaichi yoghurt


Shrikhand is mildly flavoured indian dessert which is traditionally prepared by hung curd , sugar and spices like cardamons, saffron and dry fruits.

 This Gujarati style saffron shrikhand recipe uses saffron and cardamom powder to get delicious and flavorful taste of a creamy dessert.

I did not add any dry fruits to this shrikhand as I wanted pure kesar shrikhand. adding dryfruits to this kesar shrikhand is optional.add them if u like .

Ingredients

1/2 kg thick curds (dahi)
1/3 cup powdered sugar
a few saffron (kesar) strands
1/2 tbsp warm milk
1 tsp cardamom (elaichi) powder



Method

   1. Hang the curds in a muslin cloth in a cool place for approximately 3-4  hours until all the liquid (whey) has drained off.


   2. Rub the saffron into the warm milk until it dissolves.


  3.  Mix together the hung curds, sugar, saffron mixture and cardamom in a bowl and churn using a hand blender.




 

4. chill in refrigerator. Serve garnished with saffron strands.
