AAM RAS - AAMRAS - AAMRAS PURI - MANGO PUREE -pulp


I do know this is not mango  season but still am posting this aam ras recipe . AAM RAS OR SWEET MANGO PULP is  Maharashtrian traditional dish .Summer season is incomplete without aamras  Yes Aamras, delicious, smooth and very comforting dessert during summer days.But it can also be consumed after a meal as a sweet dish, dessert or you can have it anytime.
Aam means mango and Ras means juice. Literally it means Mango pulp.The Alphonso ( hapus) mango is used for making aam ras. The Alphonso mangoes are thick, luscious and sweet as compared to other variety of mangoes.

This recipe is  popular both in Gujarat and Maharashtra. Many Gujarati and Maharashtrian weddings, serve aamras puri as a menu in summer season.







Ingredients:

2 Alphonso ( hapus) Mangoes fresh
Sugar to taste
1/4 cup whole milk (optional)
Elaichi powder / Cardamom powder - 1/2 tsp (optional)
Few saffron strands (kesar) (optional)

garnishing
Dryfruits (badam/pista /kaju) ( optional)

Method:

1.Wash, peel and cut mango in to big pieces.
2.Combine all ingredients in a blender and blend till it becomes smooth.
3.Garnish with saffron, almonds
4. Serve chilled along with poori
5.Add  dry fruits to the aamras for garnishing.

Tips:

1 The amount of sugar depends on the sweetness of mangoes and your individual  taste.
2. Adding milk is optional ,if adding add very little quantity or else it will become mango milkshake.
3. Adding kesar & cardamom  is optional
