Tomato bhaji |onion tomato sabji marathi style



This is  yet another favorite ,simple & easy vegetable which my mom used to prepare for my tiffin.
This A quick easy & fast sabji with the basic ingredients like Onion & tomatoes which are normally available in any kitchen




This is a typical Maharashtrian Bhaaji (Vegetable) which you can have with Chapati (Phulka), Bread or with Rice if you want. 
When you are running short of veggies try this tomato sabji. this is flavored with roasted peanut powder


Ingredients:

1 small onion
2-3 tomatoes
1 or 2 green chillies
5-6 curry leaves
1 tsp turmeric powder
1 tsp red chilli powder
2 tbsp peanut powder
1/2 tsp sugar (optional)
Salt as per taste

Tempering

1-2 tsp Oil
Pinch Hing ( asafoetida)
1 tsp mustard seeds (rai)

Garnishing

2 tsp freshly grated coconut
1 tsp coriander leaves chopped




Method :

1. Chop  onion into medium pieces.
2. Chop chilli & tomatoes ,coriander &keep aside.
4. Heat oil in a kadhai / pan ,add mustard seeds ,after they crackle add curry leaves & hing (asafoetida).
5. Next add green chillies & saute for 1/2 minute add onion & fry till it turns pink.Add  turmeric,red chilli powder & mix well  and saute till oil separates
6. Next add chopped tomatoes  ,add little water , cover with lid .Keep on checking in between.
7. Add salt sugar & mix well & cover with lid & cook covered for 5-7 minutes till the tomatoes are soft & done.now add peanut powder and mix well
8. Switch off gas .Garnish with freshly grated coconut & chopped coriander leaves .
9. Serve with chapati or phulka
