Corn capsicum kadhai | makai simla mirch sabji recipe




Corn is one of my favorite veggies .Last weekend i had made capsicum corn kadhai which was an instant hit in house.I had used half sweet corn & half baby corn but you can use either of the two.

Maintain healthy hemoglobin levels with this subzi, which combines folic acid rich tomatoes and sweet corn with vitamin c rich capsicum.












 
















Ingredients:

 1 cup boiled corn ( I had used both baby corn & sweet corn)
 red, yellow and green bell peppers (shredded)
 1 tsp ghee
 2 to 3 tsps ginger garlic paste
green chilli (sliced into half)
2 tsps Kashmiri red chilli paste
3 to 4 tomatoes (chopped)
a pinch of black salt /normal salt
1  and half tsp whole coriander seeds
2-3 whole red chillies
1 bunch of fresh coriander
1 tsp garam masala 

1 tsp kasuri methi
 2 chopped onions 





Method:

1.Dry roast chilli & coriander seeds & make a course powder of both.


2. Heat the pan and add ghee, chopped onions, ginger  and garlic paste. Sauté for two minutes. Add green chilies,
tomato cubes to the mix. 








3.Add coriander seeds and red chilli powder & cook till tomatoes are soft.next add, bell peppers corn, Sauté for three to four minutes. You will see that the red chilli powder has enhanced the colour of the mix. 





4.Now, add garam masala, salt, black salt, kasuri methi ,chopped coriander

5. cook for 2 minutes & serve with roti or chapati
.
