Varicha bhat recipe,Bhagar,Varyache Tandul ,samo rice,Vrat ke chawal


In maharashtrian houses Upwas Thali contains items specially made for fasts. 







Normally  upwas thali has varayiche tandul (samo/moraiyo rice) / BHAGAR /VARICHA BHAT, danyachi amti and SABUDANA THALIPEETH along with upwas lime pickle  .



In addition you will find sabudana khichdi in some houses. 







Samo rice is known as Vari Tandul, Bhagar or Kodri.in Marathi  It is the seed of a grass  ( Echinochloa Colonum) which frequently grows amongst the rice paddy as it requires damp, or even waterlogged, soil. Instead of removing it with weedkiller, farmers harvest it. When cooked, it makes a tasty and filling meal. . In the west it is called 'Samo' or 'jungle rice'.




 Ingredients:

1 cup varyache tandul (Samo seeds/moraiyo )
4 cups water
1/2 tsp cumin seeds
1/2 tsp ghee 2 green chillies chopped
2 tsp danyacha koot (Roasted peanut powder)
1 tsp lemon juice
Salt to taste


Method:
  1. Roast samo seeds it in pan till it turns slight brown in colour.
  2. Heat ghee or oil in a pan. Add cumin seeds, once they start sizzling, add chopped green chillies.
  3. Fry the chillies till colour changes to lemon yellow. Then add the roasted Samo to it.
  4. Mix well, add danyacha koot, salt and water. Put the lid and cook it similar to rice.
  5. Keep stirring in between so that it does stick to the pan. Add water if required.
  6. Squeeze lemon juice .& stir
  7. Garnish with chopped coriander and serve hot with ghee and Danyachi Amti.
