Matar wadi | Green peas vadi


As a teenager I never liked to get involved in making sweets  except tilgul ladoos & karanjis.
 I found the process  tiresome.    However i enjoyed eating them  .One such recipe is matar barfi / Matar chi wadi .

Green peas means matar in marathi & wadi /vadi means fudge/BARFI .

Matar Burfi is an easy to make sweet and a quick recipe too. You can have it as a dessert or as a sweet snack or just like that.
 It has a shelf life of about 10-15 days so you can make in advance and keep it ready to serve when needed. In hot summer days you can keep it for about a week.



Mom prepares a wide range of wadis like naralachi wadi  ,beetroot wadi,amba vadi ,batata vadi ,tomato vadi,beetroot wadi   .
   .
But being green peas season . Todays recipe is matar chi wadi ie Green peas barfi / matar naral wadi.

Again moms recipe which was sent to me by her.I clicked the photos & asked the recipe on phone.So here we go    .

Ingredients


Matar /green peas crushed in mixer (paste without water - if you find it difficult to grind add 1 spoon milk) - 1 cup

Sugar - 1 cup

Half Boiled potato grated - 1/2

velchi powder - 1.5 tsp

Ghee - 1 tsp

Method:

1.Boil green peas in 2 cups of water (allow one boil ).Next drain off the water completely .now grind it into paste without adding water .paste should not be too thin nor too thick.
You can even skip boiling green peas & grind green peas directly in mixer .If grinding is difficult you can add 1 tbsp milk to make grinding easier

2.heat ghee in nonstick pan .add green peas crush for 2-3 minutes.(dont stir more or colour will change).Next add boiled potato , sugar ,khobra ( if using) .mix well & keep stirring for 5 minutes.

3.After about 20 minutes (or more) you will see  mixture getting converted in form of a lump (gola).
4.Add cardamom powder,keep stirring at least for another 2-3 minutes.It should not be total dry or thin,should be thick and sticky too.

5.Now turn off the heat and take one plastic sheet and apply some ghee on it .Place the mixture on it with spoon.Place another plastic sheet on it and spread down all the mixture evenly(1 inch thick) with the help of a rolling pin . second plastic is placed so taht mixture doesnt stick to rolling pin while spreading it .

6. With help of knife make cuts on the mixture to form diamond shape/rhombus shaped wadis . Place sliced badam or pista on each wadi.

7.Let it cool down for say 2-3 hrs.Take out all pieces & enjoy.

8.They stay fresh outside in an airtight container for 4-5 days  after that they must be refrigerated.
Don't forget to eat................... :)





Tips:

1.Can add 2 -3 tsp wet grated coconut in above recipe .hoWever this is an optional step.

2.sugar has t0 be exact 1:1 ratio with green peas crush.

3.Adding coconut might dilute green colour of wadis .skip it ifyou want pure green wadis
