Aloo baingan recipe, how to make dry aloo baingan recipe

Brinjal /eggplant is called as baingan in hindi & vanga in marathi.

Today I am posting north indian style sabji made from brinjal & potato namely aloo baingan ,where aloo means potato in english &  batata in marathi

I guess majority of us like potatoes including kids .I myself as a child would eat any vegetable that had potato in it . i do like brinjals also


Aloo baingan recipe – This simple and super easy recipe of aloo baingan is a dry sabji.

One can have the aloo baingan with parathas, phulkas and even plain bread.

Now lets move to the recipe

Ingredients

2-3 tbsp oil
1/2 tsp cumin seeds (jeera)
1 chopped potato
1/2 cup brinjal (baingan / eggplant) cubes
1/2 cup finely chopped onions
1/2 cup finely chopped tomatoes
3 tsp chopped garlic (lehsun)
2 tsp chopped ginger (adrak)
1 slit green chilli
1 tsp red chili powder
1/4 tsp turmeric powder (haldi)
1/2 tsp coriander (dhania) powder
1 tsp cumin powder
salt to taste




Method

1. Wash the eggplant take the top tip off and chop it into one inch wedges. Wash and peel the potato and cut into 1”wedges.



2.Heat the oil in a pan and add the cumin seeds.
3.When the seeds crackle, add garlic, ginger and the slit green chilli. Saute for 1 minute.



4.Add the onions and saute till light brown. Remove the green chili and keep aside.
5.Add the tomatoes and saute till the oil seperates and tomato pieces are cooked.
6.Add the turmeric powder, mix well. Add the red chili powder,coriander and cumin powder. Mix well.
7.Add the potato pieces and saute for few minutes.Add brinjal pieces and saute for few minutes.
8.mix well and cover and cook on a slow flame till the potatoes and brinjal are cooked.Keep stirring in between after 5 minutes ,if you feel sabji is getting burnt sprinkle little water & then cover & cook till done.
9.Serve hot garnished with coriander.

Tips :

1.You can skip onions & tomatoes in above recipe 


2. Eggplant could be cooked without potatoes.
